Roasted Red Skin Potato

Roasted red skin potatoes

Ingredients :

Red skin Potatoes : 20 mini , cut into half if needed

Garlic : 12 cloves, peeled and minced

Olive oil : ΒΌ cup

Dried Rosemary : 2 tsp

Dried Basil : 1 tsp

Dried Oregano : 1 tsp

Dried Parsley : 1 Tbsp

Salt and freshly ground pepper to taste

Method

1. Preheat the oven to 400 F

2. Toss all the ingredients together in a roasting pan large enough to accommodate the potatoes in one layer .

3. Roast the potatoes for about 1 hour, turning them once or twice to encourage even roasting.
