Roasted Garlic Mushroom and Baby Potatoes Dish

Ever since we got into mid-December, it been cold and chilly
I crave warm soup and casseroles, but most of the dishes take way too much time and preparation
That’s when I decided to make my own quick dish
I love potatoe and garlic anything
So I tested out some recipes and came up with the perfect roasted garlic mushrooms and baby potatoes
Now whenever I drag myself home from a chilly day at work, I chop up some potatoes and soon I have my self a warm filling dinner
My kids even enjoy this dish
Whenever my kids get home from a cold rainy day, they ask me for something warm and filling for dinner
This dish is quick and easy, and any amateur cook and get cooking with it
Warm steaming potatoes, with herby garlic flavor enveloped into the tender mushrooms
I’m getting hungry just thinking about this
It only has a few ingredients and when you make it the first time, I’m sure your going to make it more!

Two handfuls of baby potatoes ( or more for a larger crowd) or 4 large potatoes

2 handfuls of mushrooms, I used oyster mushrooms

3 heads of garlic

3 tablespoons of butter, optional- a splash of olive oil

Black pepper, basil, rosemary, salt, Italian seasoning, and whatever else you would like

And that’s it

Begin by washing and rinsing the potatoes in water
Once the potatoes have been washed, cut the potatoes into cubed size pieces
Next, begin by adding a splash of soy sauce, this is optional, to a pot, and a throw in the potatoes
Next, pour in water just until the potatoes are completely covered with the water
Next set the heat to medium on your stove, and boil the potatoes for 10 to 15 minutes, you do not want them fully cooked
Prepare the mushrooms and garlic by washing and slicing the mushrooms into bite size pieces
Next peel and chop up the garlic into tiny pieces
Once the potatoes are done boiling, get a tall pan ready and add in some butter
I also like to add in the splash of olive oil to prevent the butter from burning
Once the butter is melted and bubbling, add in the garlic and mushrooms.
Cook the mushrooms and garlic until tender, about 5 to 7 minutes, depending on the size of your mushrooms
This point you can add an all of your herbs and spices you would like
Once they are cooked, throw in the steaming hot potatoes into the pot with the mushrooms, and steer the potatoes and mushrooms on both sides
Careful not to squish the potatoes while you were stirring
Once you get your desired crispiness on your potatoes, butter up a glass pan and pour in your potatoes and mushrooms to the pan
Place your dish into a 375° oven and bake until nice and crispy or until when you and squirt a fork into a potato it slides in easily
About 20 to 30 minutes
Serve hot and steamy

This dish is a must make for those chilly January days
I make this dish about once a week and I love it
This is a quick and easy dish, yet absolutely delicious
You can even add some of you favorite veggies into it
