Roasted Bacon Wrapped Apricots

 We had a bumper crop of apricots this year.  We had a few left on my tree so I decided to experiment with them.  I made roasted apricots and wrapped them in bacon and cheese.   My husband loved them.  I thought they were pretty good myself. 

Ingredients

8 Apricots washed, sliced, and seeded
1 Small wedge of Brie cheese
Agave nectar (few drops optional)
4 Slices  cooked bacon
16 tooth picks not shown
16 small springs Rosemary 
Several Tablespoons granulated sugar

I did not use a lot of utensils:  cutting board, knife, bowls, skillet, cookie sheet.

Cook Bacon

I cooked the bacon on top of the stove because I like it crispy and very well done.  Scooch was thinking I could simplify this recipe by preparing the apricot by wrapping the uncooked bacon around the apricot, adding the cheese, rosemary,  and sweetener and bake it in the oven.  I don't have much experience in baking fruit with bacon in the oven so I found a recipe online very similar to mine.  Here is the link if you decide to bake the wrapped apricot all together in one shot.  Please share if you would like to.  I would love to see another way to cook this.  It is so good!  http://noblepig.com/2010/04/baconwrapped-apricots-with-sage/.

Wash, Slice, and Seed

While the bacon is cooking  . . . . . . wash, slice,and pit the apricots.
Cook the bacon until done.  You want it soft enough to wrap the apricot.
 

Coat the Apricots

Coat the apricots in the sugar and place them on the cookie sheet.

Roast the Apricots

Roast the apricots about 7-8 minutes in the broiler.
While they are roasting prepare the rosemary by washing and cutting a few sprigs.
Remove the roasted apricots from the oven.
 
 

Method

Cut the bacon slices in half.
Place one slice of bacon on a plate.
Center the apricot over it.
Add one drop of Agave nectar.
Trim a piece of Brie cheese and place it in the center.
Add a rosemary sprig.
Pull up the bacon and secure with a tooth pick.

We both liked these very much.  I think the Agave nectar and the Brie cheese gave it a nice flavor.  The bacon was wonderful.
The best part was . . . . . . . they were quick and easy.
