Ripe Plantains Baskets Filled With Meat and Guacamole

I usually have plantains in my kitchen since it is a food full of nutrients such as potassium, vitamin B6 and folic acid, it is also a very versatile food which has an infinite number of preparations depending on its maturity, if the plantains are green we can make coladas for babies, patacones or add chopped beans but sometimes they ripen very quickly and here I chose them for my recipe since they were very ripe with their almost black skin, so they get a sweeter flavor and they are ideal for baskets, as they open a contrast of flavors between the sweet plantains and the salty filling.

It is also a very easy recipe which will serve as appetizers.

1. Select some very ripe bananas.

2.Wash them very well

3.Remove the shell

4. Cook the plantains for 10 minutes in a pot with a little water

1. Select some very ripe bananas.

2.Wash them very well

3.Remove the shell

4. Cook the plantains for 10 minutes in a pot with a little water

1. Remove them from the stove, discard the water.

2. Let them cool

3. In a container add the plantains

4.Crush the plantains until you obtain a dough

5. Add 1 ½ cups of yellow corn flour.

6.Mix until you get a dough, we will use this to make the base of the baskets

I didn't have cup cake molds, so I used some measuring cups as a mold to make the baskets, it is not necessary to have molds, you can use any utensil you have in the kitchen or you can simply make them with your hands.


1. Grease the mold or kitchen utensil to make the basket.

2.Make a ball with the plantaisn dough and then begin to shape it with your hands.

I used an air fryer, since I think it is an easy and healthy option, although they could also be made in a frying pan with enough oil so that they can be fried completely, just like we make French fries.


1.Add the ripe plantain baskets to the air fryer for 5 minutes at 200 °C

2. check them after 5 minutes and put them for another 5 minutes at 200 °C

1. Add double cream cheese or your choice

1. Cook 3 eggs for 13 minutes

1. wash the onions, cilantro and avocados very well.

2. Finely chop the long onion, white onion, cilantro, and boiled eggs.

3. Open the avocados in half, remove the seed and add

1. Blend all the ingredients with a little salt, you can also add chili, if you want the aguacamole spicy.


NOTE

Add a little olive oil or whatever we have at home, so that the avocado does not oxidize so quickly.

1. Season the meat with garlic and salt. If you wish, you can add a little pepper or any seasonings you want.
