Rice Krispy Treat Easter Eggs

For a potluck dinner night with a group from my church, I volunteered, as per usual, to make a dessert. Since it was two days after Easter, I wanted to make something with a theme. So here we are.

Gather Ingredients

In order to create this dessert, you will need:

1/2 cup (1 stick) butter

10 cups (~18 oz) mini marshmallows (separated into 8 cups and 2 cups)

6 cups (~6 oz) crisped rice

A bunch of plastic Easter eggs

Cooking spray

White chocolate melting wafers (and milk or dark chocolate if you so choose)

Food coloring (I used blue, red, and green)

Note: I recommend measuring out your marshmallows and rice krispies ahead of time, so you can quickly add them when the time comes.

Melt Butter

In a large pot, melt the butter on low heat, making sure to stir constantly so it won't brown.

Note: I like to use a wooden spatula because it makes mixing the marshmallows and cereal a lot easier than a bendy spatula.

Melt the Marshmallows

Pour in 8 cups of marshmallows and stir constantly until all the lumps are gone. But be careful not to let it cook too long or the treats end up hard to chew. As soon as it's all melted, turn off the burner and move the pot away from the heat.

Mix in the Cereal

Another straightforward step. Pour in all of the rice krispies and mix until it's all combined.

Mix in Extra Marshmallows

For that extra softness, I like to put in extra marshmallows. Use the 2 leftover cups and pour them in after everything else is mixed and while it's still warm. Mix them in and you have yourself some super delicious rice krispy treat "dough". Since we're not spreading it into a pan to make normal rice krispy treats, it's a good idea to pour the mix into a bowl, so the still hot pan doesn't keep cooking it.

Stuff the Eggs

And now it's time to get them into shape! It's even easier than I thought it would be. Open the eggs (I found it easier to make sure the two halves are completely detached), spray with oil (not too much,but make sure all the sides are coated), fill both halves, and close it up tight. If you've packed it right, it should form the treat into a pretty perfect egg shape. Make sure you use up all the "dough" right away, because if you leave it sitting, it won't be easy to mold later. For now, you need to let the eggs set for a few hours.

Note: I made two batches in order to fill all of the eggs I bought. 1 batch only filled 17 of these eggs.

Note 2: After I was done with this project, it occurred to me that I could forego the extra mini marshmallows and, instead, get some regular sized marshmallows (perhaps yellow ones?) and put them in the center of the rice krispy eggs and have it be a yolk of sorts. I guess I'll do that next year.

Get Your Coloring Materials Ready

It's time to decorate some Easter eggs! I recommend getting melting wafers for this. Chocolate chips or a chocolate bar just does not work as well. I bought white melting wafers and colored them with a very little bit of food coloring to get the pastel shades I wanted. I also ended up doing some with milk chocolate too, though I wish I had thought ahead and bought wafers for that instead of just melting a chocolate bar. (It doesn't set up as well and ends up melting when you hold the egg.)

Note: I set my bowls in trays of hot water to keep the melted wafers from hardening before I finished using them.

Time to Decorate

The eggs should come out of their shells very easily. If they're not staying together very well, you might not have let them sit for long enough. Mine sat for about three hours before I opened them.

Decorating was a bit messy. I just dipped the spoons into the colors and drizzled the stuff in whatever pattern I wanted. Some of them turned out pretty cute, though some of them were hard to get perfect.

After coloring, I set them on parchment paper. The melting wafers set up pretty quickly, but I still left them standing for a while to make sure. The chocolate ones had to go in the fridge because I didn't have the time to wait for the chocolate to harden at room temperature.

There you have it! Super cute Easter snack! Since it was for a party, I went a step further and arranged them in a basket lined with parchment paper.
