Rice Krispies POPsicle for One (or More)

When inside, summertime reminds me of Popsicles, Fudgsicles and Chocolate Covered Ice Cream Bars.  If outside, summertime reminds me of picnics and Rice Krispies treats.  Let's combine the best of both and make a treat that...
  1. can be eaten either inside or outside
  2. doesn't melt
  3. is adaptable to a single serve or can feed a crowd

This instructable will show how to make a single serving Rice Krispies treat POPsicle (which keeps one from being tempted to finish off an entire batch by herself!), along with a full batch that is formed as an oversized GI-NOR-MOUS POPsicle, but will feed many using the standard Rice Krispies treats recipe. 

Gather the Following...

...for a generous Single Serving:
  • 1 cup Rice Krispies cereal (or a knock-off)
  • 1/2 cup of mini marshmallows (or 6-7 big ones if all the mini's have disappeared)
  • 3/4 teaspoon margarine
...for a Full Batch:
  • 6 cups Rice Krispies cereal
  • 10 oz package of marshmallows (which is about 3 cups of the mini or about 40 of the large)
  • 1/4 cup margarine

Microwave
Microwave Safe Mixing Bowl
Spatula
Sharp Knife
Small Loaf Pan (or a Baking Pan for the full batch), coated with non-stick spray
Craft Stick (or Paint Stirrer for the full batch)
Chocolate Frosting
Sprinkles

Combine Marshmallows and Margarine in a Glass Bowl...

...for a Single Serving:
  • Microwave on high for about 20 seconds in a microwave safe bowl. 
  • Stir together melted margarine and marshmallows, and microwave 10 more seconds if not fully melted/combined. 
  • Sir in cereal, mixing until well coated

...for a Full Batch:
  • Microwave on high for 2 minutes. 
  • Stir melted margarine into marshmallows and microwave (on high) for one more minute.
  • Stir in cereal, mixing until well coated

Form the Base...

...for a Single Serving, press mixture evenly into a 2.5" x 4" loaf pan*, and set aside a craft stick.  Let cool. 
     *If you don't have a tin that small, wait a few minutes and later shape the mixture into an ice cream bar shape.

...for a Full Batch, press mixture into a 9" x13" cake pan, and set aside a paint stirrer to create the GI-NOR-MOUS POP.  Let cool.

Once Cooled...

...for a Single Serving, remove from small loaf pan and use a sharp knife to cut a slit on the side.  Insert least half of the craft stick into this base and press mixture firmly around the craft stick.

...for a Full Batch, remove from cake pan and use a sharp knife to cut a slit that allows a portion of the paint stirrer to be inserted.  When serving, portions will be cut from this base and the paint stirrer does not need to be inserted as deeply as the craft stick above (since it will not be lifted.). 

Apply Coating...

...for Single Serving: 
  • Microwave chocolate frosting for 10-15 seconds in a deep cup
  • Either dunk the treat in the cup, or pour the melted frosting on top
  • Add sprinkles before frosting cools

...for Full Batch (and served as a GI-NOR-MOUS POPsicle cake):

  • Microwave chocolate frosting for 10-15 seconds in a deep cup
  • Pour melted frosting over the POPcake
  • Add sprinkles before frosting cools
(If drama is required, be sure to pat your forehead with flour :-)
