Rice Crispy Treats

Rice crispy treats are a quick and easy dessert and they're quite nostalgic for me. I remember having them often as a little girl with one of my aunts. It actually took me a few years to make them without her for the first time, and I still think of her every time I mix a batch up.

I just use the recipe on the rice crispy box. I have noticed there is a slight difference in the Kroger brand recipe and the Kellogg's Rice Krispies brand recipe, but I just use whichever recipe I have at the time. This one just happens to be the Kroger brand.

Ingredients

6 1/2 cups of rice crispy cereal

1 10 oz bag of marshmallows

1 tsp vanilla

4 tbsp butter or margarine

Melt Marshmallows

The recipe says to melt the butter and marshmallows over LOW heat (and it actually capitalizes it like that) and to stir occasionally.

I do not have the patience.

I melt the butter and marshmallows over medium-low heat and stir frequently and it still doesn't get done quickly enough!

Add Vanilla

After the butter and marshmallows are completely melted, remove from heat and add one teaspoon vanilla. Stir well.

Add Cereal

Immediately add six and a half cups of rice crispy cereal. Stir until marshmallows coat entire mixture evenly, then pour into a greased 9x13 pan.

Flatten Treats

Use the back of a spoon, or your hand, to flatten the treats out over the pan. If you use your hand, be sure to spray a little cooking spray in it or it will look like the one above. The cooking spray helps prevent the marshmallows and cereal from sticking to you. It's hard to smooth out the treats otherwise.

Cut and serve.
