Rice Crispy Treat Easter Eggs

I saw these rice crispy treat eggs around the internet and i knew i had to make them. Only problem, i'm vegan so i needed a solution that was vegan AND tasted good. I had the help of Dandies vegan marshmallows to do the trick, and they sure did!

These little rice crispy eggs will take away your easter egg hunt to the next level of YUM!

Ingredients

This recipe is so easy, you can make it non-vegan if you wish, but i used vegan ingredients! The marshmallows are the hardest to find, but most whole foods markets carry them.

For these you will need the following
1 stick of earth balance margarine
10oz of Dandies Vegan Marshmallows (Find them here)
4 cups of rice crispies
2 cups of Annies Fruity Bunnies Cereal (Totally optional or substitute with equally cute bunny cereal)
1/2 cup jelly beans

Optional
Plastic eggs for molding

Melt Margarine and Marshmellows

First on a low heat, melt Margarine until its all liquid.

Then add the marshmallows and stir until they are a mass of goo, immediately turn off heat to prevent burning.

Add Cereal

Once your marshmallows are all melty, its time to add the cereal. I first added the rice crispies and then the fruity bunnies. Stir around till its all incorporated.

Technique 1: Making Eggs With a Mold

The first way to do this is to use a plastic egg.

First oil the egg, then put some cereal in each half and some jelly beans in the middle for a surprise!

Close it up to make both halfs meet and then remove the egg. You are left with a beautiful little egg creation.

Technique 2: Use Your Hands

I found using the mold was a bit too miticulous for me, so i decided to use my hands.

Just put a bit of oil on your hands and shape the eggs, putting jelly beans in the middle as you wish.

Serve or Hide

Once your are done with your batch of eggs, you can either hide them or serve them up!

I strongly recommend some sort of protection from the elements if you are hiding these around, maybe some wax paper.
