Rice Cracker Checkers/Checkerboard With 2 Different Flavors

Checkers is a simple and fun game that many people know and enjoy. In this Instructable, you'll learn how to make a checkers game with Asian-style rice crackers on a board of rice and seaweed.

Have fun and remember, "Don't play with your food" is only a suggestion!

Supplies

  • White Rice (5 cups)
  • Glutinous rice (a bit)
  • Black glutinous rice (a bit)
  • Multi-grain rice mix (2 cups)

Note: You do not need to have everything on this list, just pick two kinds of rice/grains that have a different color. We used white rice and a of black glutinous rice & multi-grain rice mix.

  • Dried Seaweed (the big sheets you use for sushi work best)
  • 2-3 eggs
  • Salt
  • around 13g Cooking oil (we used avocado oil, but any cooking oil should be fine)
  • Seasoning (we used cumin, black pepper, garlic salt, and 5-spice. You can add your own favorite flavor)

Tools

  • Rice cooker
  • Air fryer & air fryer liner
  • Round cookie cutter or glass jar with size of opening of ~2”
  • Plastic wrap
  • Parchment paper, at least 18” wide
  • Rolling pin

Cook Rice

Cook 5 cups of white rice. You will need to add water as per the instructions on your rice cooker (with our rice cooker, we add water to the bar at level “5” for 5 cups of white rice. Once cooked, put in the fridge overnight.

We also made two cups of multi-grain rice with some black glutinous rice. The extra glutinous rice is added to make shaping of checker piece easier. This typically needs a bit more water and a bit longer cooking time with our rice cooker (we use the setting for cooking brown rice). Once done cooking, also put in the fridge overnight.

Season White Rice

For each 500g of rice, add one egg and about 5g of cooking oil. Eggs are necessary to make the rice crackers crispier. Cooking oil is optional -- without it, the rice cracker will be a little harder to bite. Add seasoning of your choice. Mix evenly.

Flatten White Rice

Cover cooking board or cookie sheet with plastic wraps. Scoop the rice on to the board then cover it with another layer of plastic wrap. Flatten the rice with rolling pin to about 1cm in height.

Cut Crackers

Use the cookie cutter or glass jar to cut the rice pieces. Lay them carefully into air fryer (it will be helpful if you have air fryer liner sheets to avoid sticking on to the frying rack). If you want to add toppings, do it now.

Cut out 24 “K”s with seaweed sheets and put one “K” on the top of each piece to mark the King side.

Remember, you need 12 pieces per side, so make at least 6 pieces each time.

Cook at 360F for 10 minutes (with preheat). Open and flip, then cook another 8 minutes.

Repeat for Black Rice

Repeat with the black glutinous rice & multi-grain rice mix.

Board

Cut out a 24” x18" block of parchment paper. Lay it flat on the table. 

Spread the remaining plain white rice onto the parchment paper. Cover the rolling pins with plastic wrap (to prevent sticking), then roll the rice flat. Make a 18”x18” square of rice and trim off any extra.

Checker Pattern

Cut the seaweed sheet into 32 squares with dimensions 2.25” x 2.25”. 

Lay out the seaweed squares on the rice board as shown and roll flat again.
