Reverse Searing Steak

Are you tired of overcooking and undercooking expensive steaks? Do you spend hours preparing them and they still come out tough and chewy? Well, what I'm about to show you is an easy, fast, foolproof method to cooking a perfect stake every time. The secret is to cook it in the oven really slow then cook the outside so you get a perfect crust with a moist juicy inside.

Supplies

Steak, butter, salt, pepper, olive oil, cast iron skillet or flat top griddle, oven rack, paper towels. oven, thermometer.

Selecting Your Meat

This obvious step is one of the most important. The better the cut of meat the better the end will result. I suggest whatever cut you pick, make sure it is a prime or choice USDA selection.

Letting Steak Raise to Room Temperature

2-3 hours before you plan on cooking the steak take it out of the fridge and let it set. We want the steak to start the cooking process at room temperature.

Raising and Oiling the Steak

Place the stake on an over rack that is raised over a pan or pot so that the excess oils, water, and seasoning have somewhere to fall into without making a mess.

Once steak is on oven rack take paper towels and dab the steak dry. Moisture is bad for the steak.

Next, brush the steak with a little bit of olive oil, to help the seasoning to stick and form a better crust.

Seasoning

Next we sprinkle a generous portion of salt and pepper on both sides of the steak. Don't be afraid to overdue it. This and the oil make for a good solid crust, as well as locking the juices in the steak.

Baking

Preheat your oven to 275 degrees Fahrenheit. Once oven is heated up, place steak still on rack in oven.

Cook until internal temperature reaches 125 degrees.

Resting

Once steak has reaches 125 degrees, pull steak out of oven and lest rest at room temperature for 10-15 minutes. This lets all the juices soak back into the meat adding flavor.

While steak is resting heat up your skillet or flat top grill on high.

Heating Grill

Is skillet hot enough

The next step is to get your flat top or skillet as hot as it can go. This is crucial to getting a great crisp crust to the meat.

Once the flat top or skillet is hot enough the oil should start to burn and smoke. This is how you know when its time to cook steak.

Fry

Now that we are hot enough place steak on and skillet for 75 seconds.

Once time is up, flip steak and place a tablespoon of butter on top of cooked side.

Cook this side for another 75 seconds before removing steak from heat.

Now your steak is cooked to perfection. Plate steak and serve with your favorite sides. No need to let steak rest anymore because steak already rested in step #6. ENJOY!!
