Resort Style Pina Colada

For those hot summer days, there´s nothing better than a refreshing beverage. And my absolute favorite is piña colada. There´s something about that tropical flavor that makes me feel relaxed.

On a recent trip to the beach, at one of those all inclusive resorts, a friendly waitress saw how much I enjoyed this beverage and was kind enough to share the recipe with me. You´ll see how the mix of fresh ingredients and store bought juice makes it flavorful and with that amazing texture that only fresh pineapple has.

Gather Your Ingredients

1/2 cup of fresh pineapple

1 cup coconut milk

1 cup pineapple juice

1 cup ice cubes

1/2 cup sugar

Chop

Remove the skin of the pineapple. Then remove the center.

Dice the pineapple.

Add Ingredients

Add the ingredients to the blender. The secret of blending them well is to add them in this order:

  • Pineapple
  • ice cubes
  • sugar
  • coconut milk
  • pineapple juice

Blend

Then let the blender do its magic. If you have a frappe button on your blender use that one. Let it shred the ice and when the sound changes, that means all the ice is shredded.

If your blender doesn´t have that button, start by blending it on a medium speed, then increase the speed until you reach the top speed, wait until the ice is shredded. (you know better your blender, so if you think it won´t be able to handle the ice don´t do it)

Such a festive drink deserves a nice presentation. So put the piña colada in a cute mason jar, add a paper straw and a small slice of pineapple.
