Refreshing "Swamp Water" Popsicles
The colour of these popsicles may be a bit alarming, but they are an absolutely refreshing treat. You can even add an extra zip by adding an ounce of your favourite hard liquor to the mix (my preference is gin).
Supplies
- 1/2 cup diced cucumber
- 1/4 cup fresh mint leaves
- 1 1/2 cups water
- 1/4 cup sugar
- 2-4 limes
- blender
Prep the Cucumber
The cucumber is going to be pureed, so do not worry about how nicely you dice it. Just chop it up until you can roughly fill a 1/2 cup measure. Add cucumber pieces to the blender.
Bruise the Mint
Pluck the mind leaves and rub them between your fingers until they are fragrant. You can use the tender ends of new stalks, but avoid tough pieces. Add mint to the blender.
Add the Limes
Roll the limes with your hand on a hard surface to soften them. Cut the limes in half and squeeze the juices into the blender.
I find it useful to wrap the lime halves in cheese cloth before squeezing them. The cheese cloth will catch any pits.
Add the Sugar
Pour the sugar into the blender
Blending Time
Marvel at your concoction and resist the urge to fill a punch bowl!
Blend the mixture until it is frothy.
Chill
Place the contents of the blender into the fridge for at least 30 minutes. The mixture should start to separate.
Strain the Slurry
Strain the swampy contents of the blender through a sieve.
Fill the Moulds
Fill the popsicle moulds with the refreshing mixture. Place the popsicles in the freezer for 4 hours or until solid
Enjoy
Remove your popsicles from their moulds and enjoy your refreshing treat!
