RedNeck Chicken and Sausage Burrito
A pair of chicken and sausage burritos made with a redneck flair...how is it redneck you ask? Have you seen my pics?
Shopping
1 lb of ground chicken
1 package of hot italian sausage
I package seasoning packet of choice or spice mix of choice
diced onions
diced peppers
jarred salsa
chopped garlic
cheese of choice (I'm using a pepper jack)
tortillas
salad mix

The Mix
Place about a half cup of frozen diced onions and bell peppers in a frying pan and heat to thaw
slice the casing of 2 sausage and add the meat to the frying pan, as it starts to brown chop it into smaller pieces
add the ground chicken, the seasoning package, the garlic and a couple tablespoons of salsa ( I also used a sweet pepper salsa)
about a 1/4 cup of water stir and bring to a boil then reduce to a simmer
slice the casing of 2 sausage and add the meat to the frying pan, as it starts to brown chop it into smaller pieces
add the ground chicken, the seasoning package, the garlic and a couple tablespoons of salsa ( I also used a sweet pepper salsa)

Now It Gets Redneck...
place a couple of pieces of cheese on a tortilla and place in a toaster oven for a few minutes until the tortilla is warm and the cheese has started to melt, add about a 1/4 cup of the meat mixture then top with the some of the rabbit food, add hot sauce if wanted and roll burrito style, repeat as needed
Observations
This was very tasty without being super spicy. Some of you may be thinking that's a lot of meat for a couple of burritos and you'd be correct, it was being made for another dish that needs the meat mix cooled but I was hungry and had the tortillas so...
