Red Pepper Hummus and Feta Pumpkin

This quick and easy hummus dip goes perfect with pita chips or crackers, and will give you extra time to spend eating candy!

You'll need:

  • 1 red bell pepper
  • 1 8 oz container red pepper hummus
  • 1 6 oz container feta
  • (if desired) cilantro leaves for garnish

Supplies:

  • plastic wrap
  • 4 rubber bands

Finely Chop Red Pepper and Reserve the Stem

After washing the bell pepper, carefully slice off the top of the pepper. Cut the seeds from the top, and the stem should easily pop out. Set aside for later. Finely chop the entire pepper.

Combine Hummus, Feta, and Then Red Pepper

Next combine the feta and hummus until a chunky ball forms. Fold the chopped red pepper into the ball.

Cover Tightly With Plastic Wrap and Shape Into Pumpkin With Rubber Bands

Lay a 12 inch piece of plastic wrap across the table and drop the mixture in the center. Fold the wrap around the mixture. Form into the shape of a pumpkin and wrap rubber bands around to create indents. Place in freezer for at least two hours for the ball to hold the shape.

Place Garnishes and Enjoy!

Remove from the freezer 15 minutes before serving, and discard the plastic wrap and rubber bands. Let sit at room temperature for 10 minutes to slightly soften enough to place the stem and cilantro leaf in. Serve with pita chips or crackers.
