Healthy Vegan Red Cabbage Soup

In this instructable, red cabbage is featured as the main ingredient. This recipe is a quick and simple,but still tastes amazing .Red cabbage is a vibrant coloured , versatile ingredient to use. Some of its popular uses include: making Kimchi; vegetable salads; and stir fries. Red cabbage is also know for its health benefits. Some of the main health properties are:

- Is good for blood pressure

Supplies

For the soup:

- 1 medium piece of sweet potato, chopped into chunks

- 1 medium onion, thinly sliced

- 450g red cabbage ,chopped

- 1 tsp sunflower oil

- 1 tsp red white wine vinegar

- 2 tsp star anise

- 1 tsp dried parsley

- 2 bay leaves

- 450ml vegetable stock

- a large pinch of salt

- 1 lime, juice and zest

- liquidiser

To begin, prepare the stock by putting the star anise, parsley, bay leaves lime juice and zest and salt in the stock and leave to sit.

Whilst the stock is sitting, heat the oil in a large pan. Then cook the onions for 4-5 minutes on a medium heat or until caramelized. Add the red cabbage and sweet potato. Fry for an additional 5 minutes, stirring the ingredients occasionally to prevent them from over cooking.

Remove the star anise and bay leaves from the stock and add the stock to the pan. Add the white wine vinegar to the pan. Boil the ingredients for 10 minutes or until the cabbage is soft.

Liquidising

Put all of the ingredients from the pan into a liquidiser and blend until smooth. If a thinner consistency is desired add extra water.

Serve warm topped with ground almonds or with a side of crusty sourdough bread and enjoy!
