Reconstructed Egg Sandwich OR Egg McMuffin "Muffins"
This is a FANTASTIC breakfast recipe that is actually pretty easy to do but makes you look like you are quite the chef. If you want to sound all fancy call it a "Reconstructed egg sandwich." I call it Egg McMuffin Muffins. Whatever you call it it's sure to please your breakfast bunch!
Ingredients
The below list makes 4 muffins, Easy to double or triple etc....
Butter (For Greasing Pan)
4 Slices of White Bread
2 Slices Kraft American Cheese (quartered)
2 slices Canadian bacon (halved)
4 eggs

Preheat Oven to 350 Degrees and Grease Muffin Pan With Butter
Flatten and Cut Bread Into Circles, the Half and Press Into Pan
Use a rolling pin to gently flatten your bread slices
Then cut bread into large circles (I use a 4" bowl as a guide)
then cut circles in half and gently press 2 halves into one greased muffin cup to form your bread "cup".

Brown Canadian Bacon and Press Cheese Quarter and 1/2 Bacon Into Cup
Brown 2 slices of Canadian Bacon (On medium, one minute each side)
Press 1 quarter slice of American cheese into the bottom of your bread cup
Then add 1/2 slice Canadian bacon
Press 1 quarter slice of American cheese into the bottom of your bread cup
Then add 1/2 slice Canadian bacon
Add Egg to Cup and Bake for 25 Minutes
Add an egg to each cup (it might overflow a bit, that's fine)
Bake cups for 25 minutes (at 350 degrees) ...Or until egg is set

Add 1/4 Slice Cheese to Top After Baking
Add another 1/4 slice of American cheese to the top of your muffin
Put back into Oven for a couple of minutes (until cheese is melted)
