Raspberry Jello Pie

Jello pie is an easy pie to make that does not need any baking. You have lots of flavors to choose from and you can mix and match fruit and jello flavors! It is delicious and in one person's experience "Get ready for flavor town!"



It will take a while for your pie to set, so I would make this the day before you need it.

Supplies

Crust (Makes 1 Pie):

  • 1 pkg Graham Crackers
  • 6 tbs Butter
  • 1/2 cup Sugar

Middle

  • 1 pkg (6 oz) Raspberries

Jello Layer (Can probably make 2 low pies or 1 heaping pie)

  • 1 pkg (6 oz) Raspberries
  • 1 pkg (8 oz) Cool Whip
  • 1 pkg (3 oz) Raspberry Jello
  • 3/4 c Boiling Water
  • 1/2 c cold water (optionally with ice cubes)

Other Supplies:

  • Pie Pan
  • Ramekins (optional for extras)
  • Measuring Cups
  • Mixing Bowls
  • Pot for Boiling Water

Crust

Make your Crust! I baked mine, but you don't need to do that if you don't want to.

I wrote up an Instructable the other day to give you the basics for making a Graham Cracker Crust

Again, for one pie you will need:
  • 1 pkg Graham Crackers
  • 6 tbs Butter
  • 1/2 cup Sugar

If you want to bake, bake at 350 degrees Fahrenheit for about 12 minutes (until browned). Let the crust cool before adding the mixture. Mine sat in the fridge a couple days.

Also if this is the day you are making the pie completely, start boiling water.

Center Layer

For the center layer, you need a 6 oz package of raspberries. Wash them!

Smash the raspberries in a bowl and layer that in the pie crust.

Jell-o Layer

What you need again:
  • 1 pkg (6 oz) Raspberries
  • 1 pkg (8 oz) Cool Whip
  • 1 pkg (3 oz) Raspberry Jello
  • 3/4 c Boiling Water
  • 1/2 c cold water (optionally with ice cubes)

Mass your raspberries.

Take your boiling water and mix it with your 3 oz package of jell-o. Stir until dissolved then add your cold water. I mixed in ice cubes until I had 1/2 of ice cube water. Stir until ice cubes melt. I had a little bit too much ice cubes so I just took out the extras. This will cause the jell-o to start to set so if it starts doing that, take the cubes out and move on to mixing in your cool whip.

Once it is all mixed add in those mashed raspberries. If you want to be able to really pile on the mixture in the pie crust, refrigerate the mixture for 10 minutes or so until it has set more, but not completely. Once it is ready, put it on top of the mashed raspberry layer in your pie. I just put mine right in since I wanted mine to just fill the pie crust.

Refrigerate your pie. It is going to take a few hours at least. I just left mine overnight and in the morning it was perfect.

Decorate and Eat!

Check your pie and make sure it is set. It won't giggle like jello at all. My raspberriness leaked into the bottom of the pie a bit. Oh well, tastes great anyway :)

I grabbed some more raspberries and some whipped cream to top my pie and it was all delicious!

Like I said in the beginning, you can make two pies or you can make little ramekin treats or a pie and ramekin treats! When I went to make this I only had one pie crust so I took a few ramekins and just crumbled graham crackers in them. (If you have the time, you can use a proper graham cracker crust and shove that in the bottom of them.) Then I topped that with my extra whipped jello mixture. They are a fun treat and you can portion control if you want.
