Raspberry Ice Cream Cake

In this instructable I will show you how to make the best ice cream cake you will ever have. With multiple layers of ice cream, this raspberry cake is great for birthday parties, celebrations, and group gatherings. It will take about 3 hours to make, which includes the freezing time. So now without any further interruptions, lets make this cake.

The Bottom Layer

The bottom layer is completely made from ice cream sandwiches. Using a glass pan, cover the entire thing with ice cream sandwiches. I used regular vanilla sandwiches, but almost any flavor would taste good. I also used rectangular sandwiches, but square ones would probably work better to fit your pan. Freeze for 30 minutes.

The Second Layer

The second layer is made out of raspberry ice cream, which goes on top of the ice cream sandwiches. First let the ice cream thaw for about 10 minutes or enough to make it pretty soft. You want it to be about 2 inches thick, and for me that was a whole carton of raspberry ice cream. Smooth the ice cream out evenly across the whole pan and then freeze for an hour.

Next the caramel goes on. I just bought a can of caramel sauce and used the whole thing to spread across the cake. After that I put a whole bunch of raspberries on top of the caramel to get a real raspberry taste. Freeze for 30 minutes.

The Third Layer

The third and final layer of the ice cream cake is a vanilla layer. Take your ice cream out and let it thaw for about ten minutes. I used another whole carton of ice cream for this, but use whatever you need to make a 2 inch layer. Smooth this out and freeze for an hour.

Now you can put whatever toppings and decorations on for your cake and you are done! Cut up your cake and serve to family and friends.
