Rainbow Tagliatelle and Food Colouring

Hello everyone, here is a recipe on how to make your own pasta and food colouring.

The pasta recipe is fast to make (20 mins in all), but to make the food colouring you will need some time, about an hour.

It's just how I made it, but you can vary the colours and how to make it.

Ingredients and Supply

For your pasta, the ingredients are for one colour for one serving:

- 1 egg

- 50g of flour

- 50g of fine semolina (if you don't have it, don't worry, just replace it by flour, just like I did)

- 2.5g of salt

- A table spoon of olive oil

- Your colouring

For your colouring:

- Red: 1/4 of red beetroot

- Blue: 1/4 of Red cabbage + a tea spoon of baking soda

- Yellow: Curcuma

- Orange: Tomato Concentrate (more or less 20g)

- Green: Parsley or spinach or basil or arugula salad (spinach is the best)

- Violet: 1/4 of Red cabbage (the same as for red)

Use the same technic for all separatly.

- In a saucepan put some water and your ingredient in it and let it boil and cook.

The cook time will vary. For your green it will be around 5 mins, the beet if it's already cooked then it will take 5 mins, for your cabbage count 20 mins.

- When it's cooked, mix your ingredients

- Put it in a stamen to only keep the juice

- Put it in a little cup. I used empty jam pots.

- For the blue, separate your purple in two pots, in one put the baking soda and mix.

Make Your Pasta

In a bowl, mix everything together and form a little flat ball. Put it in the refregirator.

When you add your food colouring, it will add some water, so you will need to add some flour!

Tip: Add your colours at the begining with your egg and mix them together to see how it will colour and adjust it there. If you wait untill you have mixed everything, it will be harder to incorporate the colours. But it won't be too late, just more difficult.

Cut the Pasta

- Put some flour on your table so it won't stick

- With a rolling pin, stretch down very very very thin your pasta. Don't hesitate! If you have a rolling mill, use it.

- Cut your pasta how you like with a pizza knife (or any knife, the pizza knife is easier to use).

Cook and Eat

- Boil your water with salt in it.

- Cook it 2 minutes

- Eat your pasta with tomato sauce, creme, olive oil, etc...
