Rainbow Pizza

The Rainbow Pizza is a fun and beautifully colorful dinner/lunch project to do with the entire family. Particularly fun for kids. For any Rainbow Pizza you want to try and assemble toppings with colors that will most closely resemble the ROYGBIV rainbow spectrum, without the flavor combinations going haywire (no blueberries!). In this project we have some recommended toppings that we enjoyed, but we encourage you to experiment with different toppings and share what you liked best.

Prepare Ingredients for Rainbow Pizza

Pizza Dough

  • 1 Teaspoon Sugar
  • 2 Teaspoons Salt
  • 4 Cups All Purpose Flour
  • 1 Packet of Instant Dry Yeast
  • 5 Tablespoons Sesame Seeds
  • 4 Tablespoons Poppy Seeds
  • 2 Tablespoons Olive Oil
  • 1 Cup Hot Water

Rainbow Toppings - You can get creative here!

  • 1 Orange Pepper
  • 1 Avocado
  • 5 Red Mini Peppers
  • 1 Salami Roll (or pre-sliced pieces)
  • 1 Pineapple (or pre-sliced pieces)
  • 1 Purple Eggplant
  • 1 Purple Broccoli/Cauliflower
  • 1 or 2 Blue Potatos
  • 1 Bag of Mixed Cheddar/Mozzarella Cheese
  • 1 Chunk of Blue Cheese
  • 1 Bag of Blue Corn Chips

Additional Supplies & Equipment

  • Large Baking Tray, Cutting Boards, Knives, Bowls, etc.
  • Oven
  • Pizza Serving Tray

Make Your Own Pizza Dough!

Add the sugar and yeast packet to the cup of hot water and mix together until they are fully dissolved. Then let them sit on the counter until the yeast creates a cloudy area in the center that spreads to the edges of the bowl (5-10 min). Next, mix in the olive oil, salt, seeds and flour (mix well). Let the mixture stand for 10-20 minutes. Mix in more flour if it doesn't get dough-ey enough, and also try throwing it in the fridge for a bit.

During waiting times, start chopping your toppings in the nex step and we will come back to the dough!

Slice and Dice Toppings

Chop up all of the toppings to your desired size! This part is up to you but we found that bigger pieces of salami, peppers and cauliflower were easier to work with and created the best color effect. Make sure to cut the entire stems off the cauliflower and only keep the really vibrant heads.

Remember that you add the avocado separately after the pizza is cooked so you can set it aside now and chop it later for extra brightness on the final product.

Form Your Pizza Dough

At the beginning of this stage it may be a good time to start pre-heating the oven to 450 degrees.

Form the dough ball by kneading the mixture with your fingers and adding more flour or water to create a ball. Be sure to use extra flour on your hands and the cutting board to keep it from sticking.

Once you have a dough ball, use a floured rolling pill to roll it out into a big rectangle. Then lightly glaze the dough rectangle with some olive oil. You will cut out the rainbow shape and roll the crust once you have added the toppings!

Now you're ready to add some color!

Now we get to the fun part. This is where you get to lay out your rainbow. It is completely up to you how you design your rainbow. You can create rainbow stripes across the square, or rainbow mini-squares, or even a fully bowed rainbow like we did. Keep in mind how you want to eat the pizza afterwards; with our rainbow each slice contains a taste of every flavor which we thought was fun; however, some people might not enjoy mixing complex flavors like blue cheese and pineapple! In that case strips may make more sense. Up to you how you design it.

For our design, start with the outer R layer of red salami and peppers in a nice repeating pattern. Then for O layer we start with cheddar cheese and then finish with the orange pepper. Then we go to Y by laying out the pineapple.Then we move onto G with the chopped spinach (we will be adding diced avocado to this layer, but not until after the pizza comes out of the oven. ROYG complete! Now we move into BIV. First our "Blue" layer (blue enough!) we start with blue cheese topped with blue corn chop crumbles and a pinch of poppy seeds. Then we added I with a layer of diced blue potato mixed with diced eggplant. To finish it off we go to V with our beautiful violet cauliflower. The Rainbow is complete, beautiful. At this stage feel free to add salt/pepper and any other spices that you would like, we added some salt and pepper to everything except the pineapple row.

Next we focus on cutting out the center of the rainbow so that we can fold crusts all around the perimeter of the pizza. The crust is easy to just pinch and roll a layer of the dough and squishing it up close to the outermost layer of toppings. Your pizza is now ready to be transferred into the oven.

The oven should be pre-heated to 450 degrees. Now transfer your pizza to a baking tray brushed with olive oil, be careful on the transfer and use a couple big spatulas if you have them in order to preserve your design; it can get tricky. Now pop the pizza into the oven for 15-25 minutes or until the crust is a nice golden brown.

When finished, take the pizza out and serve hot. As we mentioned before, up to you on how you want to serve it, you can create flavor combo strips with everything on, or you can cut out strips of each flavor on its own. We found that the ROYG flavors all worked pretty well together, the YGBI flavor bridge did not play out well, and the BIV flavors did work. Again, decide on the toppings that work for you, but don't be afraid to experiment with novel flavor combinations.
