Rainbow Jelly Marshmallows

Rainbow jelly marshmallows! Sounds crazy, right? These are actually a different take on warabimochi.

Warabimochi is a jelly-like sweet made from bracken starch and covered in kinako (toasted soybean flour). I live in Japan and this sweet is popular during the summer. Bracken starch is a tad too expensive over here, so we substituted it for potato starch and the end result is a nice marshmallow flavor.

Supplies

Ingredients

100g potato starch

100g sugar

500ml water

Shaved ice flavors

Tools

Small pot

Spatula

1 large Ziploc bag

Scissor

Large bowl of ice water

1 dish for ever color of shaved ice flavor

These are simple to make!

-100 grams potato starch

-100 grams sugar

-500ml water

-Shaved ice flavors or colored gum syrup

I found these single serving flavors at the local market. The jelly marshmallows will soak in the coloring and I'll show you what to do with the leftover syrup in my next post.

The Jelly!

Combine the potato starch and sugar in a pot and add the water. Boil on low while mixing until it has the consistency of glue. It will seriously look and feel like you're mixing glue. You need to mix the entire time. It will feel like nothings happens for minutes and then BAM, it's mixed.

The Ziploc!

Use a spatula to transfer the mix into a large Ziploc bag.

Snip a bottom corner of the bag. This is to squeeze out little balls of the jelly mix.

Squeeze the balls into the large bowl of ice water.

Help form the balls with your hands in the bowl of ice water.

The Shaved Ice Flavors!

Let the jelly marshmallows soak in the flavors for an hour. You'll easily be able to see when they're finished.

If you don't have shaved ice flavors, you can use food coloring or gum syrup mixed with food coloring. The shaved ice flavors give them all a different taste.

These jelly marshmallows taste fun without the syrup, so you can skip this step and just start eating them.

These are unique and fun to eat! I'm not a jelly or jello fan, but I liked these a lot.
