RECIPE | EGGPLANT PIZZA

I have to admit, I'm not the biggest fan of eggplants but when I came across this recipe I was surprised. Eggplant pizza is great dish for those looking for something savoury but on the healthier side. You can also change up this recipe by adding any toppings you please. My favourites pizzas are Margherita and Vegetarian. I'll be basing this recipe on these two types of pizza. This dish is so easy and fun to make especially with a group of friends! Excellent for vegetarians as well.

INGREDIENTS

SERVES 6 | PREP TIME 15 MINS | COOK TIME 25 MINS INGREDIENTS

  • 1 small to medium Eggplant sliced at 0.5 inches thick
  • Shredded Mozzarella cheese
  • 1 can of Pizza Tomato Sauce
  • 1/4 cup of Extra Virgin Olive Oil

See below for ingredients for each pizza type

Toppings for Margherita Pizza

  • 1 pint Cherry/Grapes Tomatoes sliced in half
  • Handful of fresh Basil Leaves plucked, washed and dried

Toppings for Vegetarian Pizza

  • 1 small Zucchini sliced very thinly (approx. 3mm thin)3-5 small sweet peppers chopped into small pieces
  • Handful of fresh Basil Leaves plucked, washed and dried

INSTRUCTIONS

  1. Preheat the oven at 350 degrees
  2. Prepare all your ingredients as specified above
  3. Brush your eggplant rounds on both sides with olive oil
  4. Place eggplant rounds on a baking sheet and bake for 20 minutes flipping them halfway through
  5. Once eggplants are baked well remove them from the oven (Important: Make sure to cook eggplant thoroughly, it should look almost translucent and not white anymore)
  6. Spread about 1 tbsp of pizza tomato sauce, then top with 1 tbsp of mozzarella cheese
  7. Now add your favourite toppings. Try not to overload each round
  8. Place your pizzas back into the oven and bake for another 5 - 6 minutes until cheese is bubbling
