RECIPE | APPLE BERRY SALAD
Lately I've been into salads. They provide the raw nutrition that I need in a simple and quick way. I've watched a few documentaries where they discussed that eating fruits and vegetables raw is more nutritious for you because you are not killing the nutrients with heat. Of course, not all people can take raw veggies/fruit as it can make their stomach bloat but if you're able to, give it a shot! Salads are the most common way to eat raw vegetables.
I feel like this dish doesn't really require a recipe at all. You're just mixing together the fruits and veg shown below. I would recommend having this salad with a sweeter dressing like Lemon Poppyseed. There are so many recipes out there where you can create your own dressing, bypassing the ones filled with preservatives in the grocery stores. About this salad, it's got a crisp sweetness to it, thanks to the apples and berries. Apples also give this salad fibre. The blackberries have a ton of Vitamin C. The carrots give it that crunch and vitamin A. The cashews provide some protein and a hearty taste. The Arugula gives it Vitamin C and Magnesium and the spinach is booming in Vitamin A and C. All of which are good for boosting a healthy immune system fighting free radicals in the body. So to those to who think salads are bland and are just filler, if you fill the salad with the right fruit and veg you'll have one plate of full nutrition and taste. INGREDIENTS

- 6 cups of arugula and spinach spring mix salad
- 2 fancy grade apples, sliced thinly
- 1 cucumber, peeled and sliced thinly
- 2 carrots, peeled and sliced 1/2 cup of roasted cashews
- 1 pint of blackberries
- Recommended Dressing: Lemon Poppyseed
INSTRUCTIONS
- Prepare all ingredients as listed above. For the cucumbers, you may slice with a mandolin slicer or a peeler.
- Mix all your ingredients together. Top off with the dressing of your choice. Enjoy!
