Quick and Easy Vermicelli Doodh Sevaiyan
Feeling lazy, hungry, and craving something sweet?
Presenting, the quick and easy delicious Vermicelli Doodh Sevaiyan. It is called sevai kheer by some and sheer khurma by others. It is an Indian sweet dish, it can be served as a main course or dessert. It is loved by kids and adults alike. You can serve it hot or cold.
Preparation time: 15-20 minutes.

Selecting the Ingredients
1. Vermicelli (wheat) - 2 big cups
2. milk - 500ml
3. Clarified unsalted butter (Ghee) - 1 tablespoon
3. sugar: 4 spoons (adjustable as desired). (You can also eat it unsweetened or with stevia drops if you want)
4. Dryfruit pieces ( 3 to 4 of everything you want.) (You can add cashews, pistachios, almonds, raisins, dates, etc after breaking them into pieces.)
5. Saffron (optional)
Heating the Butter and Dryfruits
In a kadhai or pan, on low flame, add the ghee and dry fruits. Fry for 30 seconds.
Roasting the Vermicelli
Add the vermicelli, toss it and stir it such that it gets coated with the butter. Keep roasting the vermicelli for 2-3 minutes till its color changes to a darker shade.
Adding Milk to the Mix
Add the 500ml milk, sugar, and saffron and turn up the flame to medium-high. Cook for 5 minutes until it boils while stirring continuously.
Once the milk is reduced to some extent. cook for 2 more minutes and then turn off the heat.
