Quick and Easy Blueberry Chocolate Chip Muffins

One of my favorite things to do is bake and what's more fun than baking muffins! This is a fun and easy recipe that is filled with many options. They could be strawberry muffins, chocolate chip muffins, or even mixed berry muffins. I hope you enjoy these quick and easy blueberry chocolate chip muffins.

Gather Ingredients.

Ingredients:

-1 cup of margarine

-2 cups of white sugar

-4 eggs

-2 cups of sour cream ( 1 container of 500 ML)

-2 tsp of vanilla

-4 cups of all purpose flour

-2 tsp of baking powder

-1 tsp of baking soda

-1/2 tsp of salt

-1 cup of chocolate chips (or what you prefer)

-3 cups of blueberries (frozen work best)

Cream Together First 3 Ingredients.

In a large bowl, cream together 1 cup of margarine, 2 cups of sugar, and 4 eggs.

Leave the Combination Off to the Side.

Sour Cream.

Mix 2 tsp of vanilla with 2 cups of sour cream. For this step you can mix the 2 tsp of vanilla right in the 500 ml container and put it off to the side with the wet mixture.

Dry Ingredients.

Combine with a wooden spoon in a medium sized bowl:

4 cups of all purpose flour

2 tsp of baking powder

1 tsp of baking soda

1/2 tsp of salt

Add Sour Cream Mixture to Wet Ingredients. Stir With a Wooden Spoon.

Add Dry Ingredients to Wet Ingredient Mixture.

Do NOT over mix.

Blueberries and Chocolate Chips.

Gently stir in 3 cups of blueberries and 1 cup of chocolate chips. For best results use frozen blueberries. Stir very gently especially if you are not using frozen blueberries because the blueberries will break and splatter. Although if you do accidentally break the berries it will just leave the batter in a beautiful blue/purple colour.

Preheat Oven to 400' F or 205' C.

Line Muffin Trays.

Makes about 24 muffins.

Fill Trays With Batter.

Use a 1/4 cup measuring cup or a spoon to dish out the batter. Fill muffin cups to the top. If you want your muffins to have a tall and circular shape only make 24 muffins and fill muffin cups over the top.

Bake for 25-30 Minutes.
