Quick Vegan Nut Butter Ice Cream
You can have ice cream at the drop of a hat, or blitz of a blender... Simply keep frozen coconut milk cubes in the freezer and when the mood arises, add them to a blender with the other ingredients and you'll have a soft serve!
Of course, if coconut milk isn't your thing, you may substitute with any vegan milk or if you do consume dairy, regular cream frozen into cubes will work as well.
Use whatever nut butter you prefer. I had peanut butter when I made this recipe and used it, the result was an ice cream that was slightly flavored with PB. Super nice on a hot day.
Supplies
INGREDIENTS
1 can of coconut milk or cream (can substitute any milk)
1 cup of Nut Butter (Any nut butter will work)
1/4 cup syrup
4ml salt
EQUIPMENT
An ice tray or 2
High speed blender Blender
Ice Tray
Pour the coconut milk into an ice cube tray, freeze.
Blend
Add the coconut cubes to a blender, together with the remining ingredients and blend for 10 seconds, stop and blend for another 10 seconds. Open the lid and check if the mixture is smooth, if it is, remove it from the blender and serve. If it has some ice cubes left in it, blend them until smooth.
Do not over blend or you will have milkshake, which is good as well :)
Serve your soft serve ice cream right away in bowls or cones.
The remaining mixture can be frozen but take out of the freezer 30 minutes before serving.
