Quick Tuna Cakes

Serve these tuna cakes in a hamburger bun with lettuce or by themselves with your favorite tartar sauce or make your own. With just a few common ingredients they only take about 20 minutes start to finish.

Supplies

Mixing bowl

12" Nonstick fry pan

1/4 Teaspoon Measuring spoon

Fork or spatula for turning cakes

Spoon for mixing

Rolling pin or heavy jar for crushing crackers

Sandwich bag or piece of wax paper for crushing crackers


Ingredients:

1 6 oz Can Tuna, drained

1 Large Egg

8 Saltine Crackers, crushed

1/4 teaspoon Dry Mustard Powder

Vegetable or Canola Oil





Make Mixture

Crush saltine crackers. Place tuna, dry mustard powder, egg and saltine cracker crumbs in mixing bowl. Mix well, Let rest 3 minutes.

Prepare to Fry

Meanwhile heat 1 1/2 Tablespoons of oil in skillet over low- medium heat.

Divide tuna mixture into 3 equal portions, roll into balls. Lightly flatten each ball into a patty between palms and place gently into hot oil in skillet.

Fry

Fry on low medium heat until lightly browned about 4-6 minutes on each side.

Optional Homemade Tartar Sauce

2 Tablespoons Pickle, finely chopped

3 Tablespoons Mayonnaise

1 Tablespoon Horseradish Sauce

1 teaspoon Lime Juice

Mix well
