Quick Pi Pie Pockets

All this talk of pie had me craving a piece of apple pie.  Since I like portable eats, I made pie pockets. 

I've never attempted any type of fruit pie before. . . so I cheated!  It took under 45 minutes from craving to consuming this most pleasant treat!

Feel free to make delicious flaky crusts and unique pie fillings from scratch. 

Cheating Ingredients

The ingredients I used are:

2 Pre-made rolled  Pie Crusts

1 21oz. can of Pie Filling (apple in this case)

Flour

Supplies:

Cookie Sheet

Parchment Paper

Pizza Cutter

Fork

Knife

Crusts

Lightly dust the work surface with flour.

Unroll first one pie dough.  Stack the other atop the first and line up the edges.

Use a pizza cutter to cut the pie dough into 8 equal pieces.

Filling

I found the pieces of apple in my canned pie filling were too large to comfortably fit the triangle dough.  I cubed the slices of apple and it made for a much better fit.

If making your own filling, chop the fruit into small enough chunks.

Pull apart the two pieces of dough.

Place about 2 tablespoons of filling in the center of one triangle and place the other on top.

Gently close the dough together, making sure to have a good seal.

Use a fork to pinch the sides together, this allows for a more uniform look.

Cut a few vent hole into the top, or the sign of Pi as I did.

Prepare a cookie sheet with parchment paper.

Place finished pie pockets onto the cookie sheet.

Bake at 450 degree for 25 minutes or until golden brown.

Let cool, and place artfully onto a round plate.
