Quick Fried Pancakes

WARNING: These pancakes are very addicting! You've been warned.

This technique for cooking pancakes is used for special occasions in our family, as they are very addicting and not the healthiest thing you could eat for breakfast. ;)

What You'll Need

You will need the following:

  • Pancake mix (either a homemade recipe, or a boxed mix)
  • Cooking oil (canola, vegetable, or coconut oil.*)
  • Skillet
  • Spatula
  • Optional: pancake toppings of your choice

*NOTE: I don't recommend olive oil for this instructable. At high temperatures, olive oil turns into a carcinogen and loses all of it's health properties. It is not recommended to cook or fry with olive oil. Plus, it would give an overwhelmingly strong olive oil taste to the pancakes.

Make Your Mix & Heat Your Skillet

1. There are so many great recipes for pancakes--or you could use a box mix--so I'm not going to dwell on any one recipe for this 'ible. Use whatever your favorite recipe is.

ONLY STIPULATION: Make the pancake mix a perfect medium between runny and thick. See picture above for the perfect consistency.

2. Put your skillet on the stove, and heat it up around medium-low to medium heat (a 4 or 5 on my electric stove, with 5 being Medium).

Add Oil

Here comes the unhealthy part. For this recipe, you are going to use oil for every, single pancake.

For each pancake (if making large ones), or for 2-3 small pancakes (however many can be cooked at the same time in your skillet), add about a tennis-ball size circumference of oil (for a medium to large skillet), or a ping-pong ball size circumference of oil for a small (single pancake) skillet.

Now it's time to cook up some delicious (almost sinful!) pancakes.

Add a ladle-full (for large pancakes) or 1/4 cup (for smaller pancakes) of pancake mix to the center of the oil. If your oil ran out from the center to the edges, tilt your skillet back to pull the oil around ALL the edges of the pancake(s).

It's important that on both sides of the pancakes (once you turn them over in the next step), all edges of the pancake(s) have been surrounded by oil. This gives them delectably crisp edges.

Flip the Pancakes

After about 45 seconds to 1 minute, flip them over.

Tilt the skillet back to bring the oil around all the edges of the pancake(s) again.

Cook the second side for 45 seconds to 1 minute, or until cooked through and browned as you desire.

NOTE: Don't worry if some of the mix slops out the sides when you flip the pancakes over. This just makes more crispy pieces to enjoy later! If need be, you can flip the pancake back over to finish cooking the excess parts.

For each new large pancake, or set of smaller pancakes, add oil and follow the steps again. Repeat until all the mix is used up.

Serve

Once both sides are cooked, serve them immediately.

Just like french fries, these pancakes are best enjoyed nice and hot!

They are crunchy on the outside, fluffier on the inside, and absolutely amazing...Mmmmm :D

You can top them as you desire, but they also are delicious eaten plain.

NOTE: The oil can make them very "heavy," so you can dab off the oil with paper towel if you so desire. Also, be ready to clear your bowels after consumption ;)
