Quick & Easy Banana Cake - MADE IN a BAG!




This is probably the easiest cake recipe in the world! No mixer, no whisk, not even a spatula. Basically, all the ingredients in a large plastic food bag, mix, pour into a baking tin, bake and voila!

Or, here are the simple steps:
Put these dry ingredients in the bag & give it a shake...
125g (1 cup) self-raising flour
1/4 teaspoon baking soda
pinch of salt (skip if your self-raising flour already contains salt)
60g (1/3 cup) sugar
dash of cinnamon (optional)
Add these wet ingredients to the bag...
80-90g ripe banana (1 small)
1 medium egg
75g (1/3 cup) milk
24g (2 tablespoons) vegetable oil
10g (2 teaspoons) white vinegar
dash of vanilla (optional - I didn't use)
Quickly squash up the banana & mix into a batter. Should just take a minute or so. It's okay if there are still small bits of banana. Cut off a corner. Squeeze the batter into a 20cm/8in cake tin that has been oiled or lined.
Bake in a preheated 180C (350F) or fan 160C (320F) oven for 17-20 minutes.
This cake is soft & moist & slightly bouncy. Just a subtle banana flavor & not overly sweet. Enjoy!
