Quesadilla Rolls

Hola amigos. This is a tasty and easy twist on the great quesadilla. We used steak, but this works for chicken too. It's delicious fried goodness that can be made by the batch for any occasion. So vamanos. Lets make some.

Gather Your Ingredients

You'll need about a pound and a half of steak, any kind, 1 small onion, 1 small bell pepper, 1 packet of onion soup mix, 2 eggs, and either egg roll wrappers or spring roll wrappers. You also need about 2 cups of shredded cheese, whichever kind you prefer. (Sorry. We forgot to get that in the picture)

Cut the Steak

Slice the steak really thin. Then cut across it to make the pieces smaller. We used thin sliced steaks to make it easier. You can also sometimes find already sliced up steak at the grocery store. Just make sure they are still cut into fairly short pieces.

Chop the Onion and Pepper

Cut the ends of the onion off and peal off the outside. Try not to cry. Cut it in half and slice each half, with the flat part on the cutting board, into very thin slices. Cut the top and bottom of the pepper off. Remove the inner part with the seeds. Cut it in half and slice it thin too. Then just chop them both up really small. Use a knife or a chopper.

Sauté

In a large pan or skillet, heated on high, toss in about a tablespoon of butter or margarine. Then toss in the steak and veggies. Sauté until the steak is cooked and the veggies are getting soft.

Soup Mix?

Yes. Onion soup mix. It's a simple and awesome way to add some extra flavor. Just shake on a pack of the onion soup mix with 1/4 cup of water. Keep sautéing until all the soup mix is blended and it starts to look like a very thick gravy on the steak. You may need to add a bit more water to get the right texture. Just don't put too much water in. *Don't freak out if you do get it watery. Just keep simmering until it cooks down.

Spread It Out

Spread the mixture on a baking pan and put it in the refrigerator to cool for about an hour.

Getting Prepped for Greatness

While the filling is cooling, plug in your fryer (with fresh oil in it), get out some wax paper, spoons, your spring roll wrappers, a pastry brush, and the eggs. Feel free to draw eyeballs or faces on the eggs first. Carefully crack them, keeping the yolk out. Use an egg separator or the shell to catch the yolk. Beat the egg whites, and get ready for some fun amigos.

No, not picture time. Take out the filling and put it in a large bowl. Pour in the 2 cups of shredded cheese and mix it all up really well.

Not RAP! Although that can be fun too. Place a spring roll wrapper on your wax paper with a point at the top. Brush some egg white on the top two edges. This will seal the spring roll when you're finished. Scoop about 3 tablespoons of the filling onto the lower part of the wrapper. Fold up the bottom corner of the roll. Then, fold over the two sides, making sure no part is left open on the sides. Finally roll the whole thing up tightly, making sure the top corner seals well. Place finished rolls on a pan or a tray and cover them so they don't dry out.

Let's Fry

Drop 3 or 4 spring rolls into the fryer at a time. Make sure to move them around a bit and flip them over. They're done when they are light golden and crispy. Carefully remove them and place them on a plate lined with paper towels to absorb the grease. Cook as many fresh rolls as you can eat and freeze the rest for later.

Eat Em Up
