Quesabirria Tacos

Gather all ingredients such as the type of meat you want, the different seasonings you want to use and the different types of cheeses.

Step 1

Unthaw the meat of your choice. I used a beef roast. It cooks faster and it tends to get more tender.

Cut the meat into medium size pieces, remove the fat and season it.

  • 1 medium onion
  • 6 cloves of garlic
  • 2 tbsp paprika
  • 1-3 tbsp chicken bouilion
  • 3 bay leaves
  • 2 chile arbol
  • 3 guajillo

Step 4

Add the meat to a large pot filled with water or until meat covered. Add the bay leaves, cloves of garlic, whole chopped onions, roma tomatoes and dried chiles.

Remove the seeds from the dried chiles before adding.

Let the meat boil for 20 minutes.

Remove the onions, garlic, tomatoes and chiles.

Add to the blender with 1-2 cups of the liquid used to boil.

Add all of your seasonings.

Leave the whole bay leaves in the pot.

Add the liquid back to the pot and let simmer for 2-3 hours.

The broth is called the consume.

You can seasonings/salt as needed.

Once the meat is tender, remove it and shred it.

Add the shredded meat to the pot

Gather corn tortillas in the pot to brown, do NOT use flour tortillas.

Add your necessities into the tortilla and let it cut for 1 minute. Add cheese over the top to make it cheesy.

Once the cheese has melted you can dip it into your consume if you would like, if not EAT It UP!!
