So, feeling the munchies and you have no bread. This will help you get thru!

These bread rolls are based on an old Italian recipe for Piadina. Originally Piadinas are a type of bread somewhere between a pancake and a tortilla.

Once you try this, you will start buying a lot less bread than you did so far.

The recipe is based on 100g so it's easy to scale (in Europe :D). It yields 4 bread rolls.

Supplies

Flour - 100g (1 cup)

Baking powder - 3g (1/4 tbsp)

Salt - 4g (1/4 tbsp)

Olive oil extra vergine - 4g (1tsp)

Water warm - 60g (2.4 cups)

Scale

Spatula

Frying pan

Mix the Dough

Mix flour, salt and baking powder in one bowl. Mix water and live oil and add the mixture to dry ingredients. Start mixing in a bowl. When it starts forming put on a well-floured surface and knead the dough. Do not worry about the dough being wet, it will dry in the kneading process. If necessary, add some more flour. Knead for at least 7-10 minutes.

When finished, the dough should bounce back if lightly pressed.

Forming and Baking

No need to put the dough aside. Divide in 4 equal parts and flatten to about half a centimeter (1/4 inch).

Bake on medium heat, on a dry pan. No oil needed. It should take about 3-4 minutes on each side.
