Purple Cabbage Salad

I wasn't always a fan of red cabbage until I had this salad. The dressing adds so much flavor and has a nice kick. Cabbage never tasted so good. This recipe can also be found at gardengirlrecipes.com.

Ingredients:

½ cup (70g) raw pumpkin seeds

½ red cabbage (½kg), thinly sliced

½ bunch carrots (250g), thinly sliced

½ cup parsley, chopped

½ cup mint leaves, chopped

for the dressing:

1½ tablespoons olive oil

1½ tablespoons lemon juice + the zests

½ tablespoons maple syrup

½ clove garlic, minced

½ teaspoon ground cinnamon

1 teaspoon ground cumin

pinch cayenne, if desired

1 teaspoon rosewater (optional)

¾ teaspoon salt

Prepare Dressing

In a small bowl, whisk together all the ingredients for the dressing and set aside.

Combine Veggies and Herbs

In a large bowl, add the red cabbage, carrots, parsley, and mint leaves and mix well.

Add Dressing

Add the dressing and mix well.

Add Pumpkin Seeds

Add pumpkin seeds and season with additional salt to taste.
