Pumpkin Seeds, Cubes, and Pie All in a Pumpkin

With Halloween near, you might want to eat something with pumpkins, perhaps the seeds from carving or a pie. What about both? I used a mishmash of different recipes to use all parts of a pumpkin. I made seeds that compliment cubed pieces and a pie as dessert, all inside the half of a pumpkin.

Supplies

Tools

  • Food processor/blender
  • Baking tray
  • Pot
  • Pie plate
  • Scale
  • Bowl
  • Cheesecloth or fine mesh strainer (optional, see step three)
  • Parchment paper
  • Knife
  • Fork & spoon
  • Saran wrap
  • Rolling pin
  • Measuring spoons

Ingredients

  • One pie pumpkin (optional see step three)
  • One pumpkin that is around 12-15 inches in diameter
  • Three large eggs
  • 1 stick of butter
  • 1/2 of an onion
  • 1 & 1/2 cup of heavy cream
  • 5/6 cup of brown sugar
  • 1 cup of water
  • 1/2 cup of chicken stock
  • 2 tsp of cold water
  • 1 tsp of cinnamon
  • 2 tsp of freshly grated ginger
  • 1/4 tsp of ground nutmeg
  • 1/4 tsp of ground cloves
  • 1/4 tsp of ground cardamom
  • 1/2 tsp of lemon zest
  • Salt
  • Olive oil

Dough for Pie

  • Combine 165g of all-purpose flour to a food processor along with 8g of sugar, 5g of salt, and mix together.
  • Add in a stick of butter cut into ½ inch cubes.
  • Pulse a few times until it becomes crumbly bits of dough.
  • Remove dough onto a flat surface and add two tablespoons of cold water, add more water if the dough can't hold together.
  • Knead into a ball and use saran wrap around.
  • Chill in the refrigerator until needed for at least 30 minutes.

 

When making the pie take it out of the refrigerator 10 minutes prior in order for the dough not to be to tough. Lightly flour your work surface and roll into a circle that is around 12 inches in diameter.


Pumpkin Prep

Wash the large pumpkin and cut in half horizontally. Clean the fibrous insides with a spoon scooping the seeds in bowl.


(Optional) Homemade Puree

This step is if you are making your own pumpkin puree instead of buying some at the store.

  • Pre-heat oven to 425 f.
  • Cut the pie pumpkin in half vertically and clean the insides, placing seeds in the previous bowl.
  • Lay parchment paper on top of a baking sheet and put the pumpkin halves on top cut side down.
  • Bake for 35-55 minutes. It should be easily pierced by a fork.
  • Scrape the soft flesh (not the skin) and blend. If the puree has too watery of a consistency put in cheesecloth and drain.


Cooking the Seeds

  1. Peel away the large string attached to seeds. (it's okay to leave some)
  2. Boil enough water to cover seeds in a pot, adding salt to the water, I added 4 tsp to mine.
  3. Boil for 5 minutes.
  4. Take seeds out of the water and evenly spread them on a tray.
  5. Evenly spread a light coating of olive oil along with your favorite spice and salt to taste.
  6. Bake at 425 for around 15-25 minutes or until golden brown, making sure the seeds are not burnt.

Note: Smaller seeds will be done much faster than larger seeds be careful so they don't burn.

Cubed Savory Pumpkin

  1. Cut one of the already cut halves into another half, quartering the pumpkin.
  2. Skin the quartered pumpkin.
  3. Cut into cubes around one inch thick.
  4. Add oil and half of a diced onion into a pot.
  5. After the onions start to brown, add the pumpkin cubes with a cup of water and a half cup of chicken stock.
  6. Cook for another 20 minutes then remove.

The Pie

  • Preheat oven to 425
  • Add in the cardamom, cinnamon, ginger, nutmeg, cloves, lemon zest, brown sugar heavy cream, two eggs, the yolk of a third, and mix in the blender.
  • Lay the pie dough over the pie plate and pour the filling.
  • Bake for 15 minutes before lowering the temperature to 350 and baking for another 45-55 minutes.

When finished the center should still be barely jiggly and the filling shouldn't be dry and cracked.

With all parts finished you can plate each part as desired, I used the half from earlier as a bowl. Then, I used a smaller bowl and put the seeds inside and the cubed pumpkin around said bowl as to not get seeds soggy. I finally put the pie on top.
