Pumpkin Risotto With Kale Served in a Pumpkin
How I love fall. Beautiful colors outside, everything is getting cosy again and most importantly; Halloween is coming! Halloween just seems to be all about candy, cupcakes, pie and all things sweet. But a good meal is just as important on that wonderful day. Don't know what you want to eat on Halloween? Well here's a good idea: pumpkin risotto with kale, served in a pumpkin! Clever isn't it? It looks great and it tastes even better!
Ingredients
Here's what you need for one serving
Medium sized pumpkin (big enough to fit a serving)
100g/3,5oz Risotto rice
100g/3,5oz Chopped kale
1/2 Fennel
1/2 Red pepper
40g/1,4oz Grated parmesan
500ml Herb broth
Salt
Pepper

Chop Chop Chop and Broth
A good meal begins with some chopping! Chop the fennel and red pepper. Next cut of the top of the pumpkin and scoop the squash out. Remove the seeds from the squash. Meanwhile, heat up the broth!
You can roast the seeds as a snack. Very yummie!

Let's Make Some Risotto!
Boil some water and add the kale. Heat up a little olive oil in another pan. Bake the fennel and the red pepper for a minute. Next add the squash and bake that for a minute as well. Keep stiring it and add the risotto. Bake that until it's a bit glassy. Then add a bit broth. Let it boil until the risotto soaked it up. Make sure you keep stiring it well. You don't want it to burn! Add some pepper and salt. Next add another batch of broth and let the risotto soak it all up. Keep repeating this until your out of broth. The risotto should be done now. Next mix the (drained) kale in there and after that you add the cheese. Your risotto is done and delicious!
Presentation
Now for the best bit: making it look good! Just fill up the hollow pumpkin with you delicious risotto. Casually put the top on there and serve it with pieces of bread! It's really wonderful and this was kind of an experiment, but the flavours are really amazing together. I will be eating this on Halloween! Enjoy.
