Pumpkin Pie Oatmeal

Cold mornings call for a hot breakfast! Fuel your body with a warm bowl of Pumpkin Pie Oatmeal. Filled with super-foods and antioxidants, this is a nutritious, tummy warming, and easy meal. Confession... I've enjoyed this bowl of goodness for dinner after a long, cold day outside, snuggled up on the couch in my pj's. It's a delicious, warming, comfort meal any time of the day or night. Supplies

Ingredients:

1/2 cup water

1/2 cup milk

1/2 cup old fashioned oats

1/2 cup 100% pure pumpkin (NOT canned pumpkin pie mix)

1/2 tsp. pumpkin pie spice (*can substitute cinnamon)

1 tsp. brown sugar, plus additional for topping

1 Tbsp. raisins, plus additional for topping

pinch of kosher salt

2 Tbsp. walnuts, chopped

1 tsp. butter

Cooking gear:

small saucepan (you don't need the lid)

can opener

liquid measuring cup

1/2 cup dry measuring cup

tablespoon measuring spoon

1/2 tsp. measuring spoon

silicon spatula (or stirring spoon)

serving bowl

spoon for eating

Add Milk and Water

Add milk and water to a small saucepan, and bring to a boil. *Helpful morning hint, don't walk away to get a cup of coffee while this is coming up to temperature. I've had it boil over, and its not the best way to start the day!

Add Oats, Pumpkin, Spice, Sugar, and Raisins

Stir in oats, pumpkin, pumpkin pie spice, brown sugar and raisins. Reduce heat and simmer for 5-8 minutes, stirring occasionally.

Serve

When mixture is thickened to your liking, spoon into your favorite cereal bowl, top with walnuts, butter, a little sugar, and additional raisins, if desired.
