Pumpkin Muffin Recipe
These delicious muffins are very simple to make and are a great snack for a busy morning.
Supplies
Muffin pans
Medium bowl
Large bowl
Spatula
Electric mixer or stand mixer
Ingredients
3 cups Flour
1 cup brown sugar
4 teaspoons baking powder
2 teaspoons ground cinnamon
2 teaspoons ground ginger
1 teaspoon salt
2 eggs
2 cups milk
1 cup canned pumpkin
1/2 cup vegetable oil
1 teaspoon orange zest
chocolate chips
Combine Dry Ingredients
Mix together Flour, brown sugar, baking powder, cinnamon, ginger, and salt in a medium bowl. Make sure all the dry ingredients are well combined.
Combine Wet Ingredients
Mix together eggs, milk, pumpkin, oil, and orange zest in a large bowl with a mixer. Mix on medium speed until everything is well combined.
Combine Wet and Dry Mixtures and Preheat Oven
Add the dry mixture to the wet mixture and mix until there are no lumps in the batter. Preheat your oven to 375* Fahrenheit
Fold in Chocolate Chips
Using a spatula fold in chocolate chips. You can also add nuts at this stage if you would like.
Grease and Fill Muffin Pans
Grease your muffin pans with cooking spray. Fill 3/4s full with the batter. If the are any empty spots in the muffin pan fill those spots with enough water to cover the bottom.
Bake
Bake the muffins at 375 for about 17 minutes or until a toothpick inserted into the muffin comes out clean.
Enjoy!
Let the muffins cool then store in a ziplock bag. The muffins can also be frozen for about a month in a freezer.
