Pumpkin Mousse With Halloween Chocolate Decoration

Here's how to make an AMAZING Pumpkin Mousse!

(Recipe adapted from InspiredTaste.net)

Supplies

Whipped Cream Mixture:

  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar
  • small pinch of salt

The Pumpkin Mixture:

  • 8 oz. cream cheese, at room temperature
  • 2/3 cup sugar (brown, granulated, or a mix)
  • zest from one lemon (about 1 tsp)
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • small pinch of salt
  • 1 cup pumpkin puree

Cookie Layer:

  • 1 1/2 cups or about 24 ginger snap cookies, crushed

Whipped Cream Mixture

Whip the cream, vanilla, and 1/4 cup of sugar until soft peaks form. Refrigerate.

Pumpkin Mixture

In a medium mixing bowl, beat the softened cream cheese with 2/3 cup sugar, the lemon zest, 1 tsp cinnamon, 1 tsp ginger, 1/4 tsp nutmeg, and a small pinch of salt. Add 1 cup pumpkin puree and beat until well mixed and creamy.

Finishing the Pumpkin Mixture

Gently incorporate half of the whipped cream mixture into the pumpkin mixture.

Place about 24 ginger snap cookies in a plastic bag and use a mallet or rolling pin to crush the cookies into little pieces. It should yield about 1 1/2 cups of crumbs.

Set out 8 cups (I used 8-ounce cups), and begin the layering process. I started with cookies, then the pumpkin mixture, followed by the whipped cream mixture. You can repeat these steps again if you have a deeper cup but I only did it once. Top with the remaining cookie crumbs. Set aside.

Starting the Chocolate Toppers

Ingredients:

  • Parchment paper or silicone artisan mat
  • Candy bags or sandwich bags
  • Toothpicks
  • Candy Melts, meltable chocolate, or chocolate chips ( for the candy melts they can be whatever color you like, you can find them online, or at Walmart, Michaels)
  • Scissors
  • Tape
  • Stencils (print them off the computer)

Melting Your Chocolate

First, tape your stencil and parchment paper onto your surface (I used a brownie pan lid). Second, get out your glass bowls and chocolate. You can either melt the chocolate in the microwave or you can heat water in a pot, then put the glass bowl on it, next put the chocolate in the bowl, now keep steering it untell it melts (If you are using chocolate chips then it will take way longer).

Dyeing the Chocolate

If you used the candy melts this step does not apply to you. If you used chocolate chips or melting chocolate you will need any color food coloring that you want and dye the white chocolate until it is the shade you want.

Making the Chocolate "Figures"

Put the melted chocolate in the bags and start piping the chocolate on to the parchment paper in the shape or thing you chose for your stencil. Now you need to add little "tales" to them so that they stay up rite in the mouse (I did Halloween themed stuff and one is a black cat and if you have an animal one like me their legs will be fine for the "tail"). Once that is done you need to put your chocolate shapes into your refrigerator for 20 minutes.

When you take the chocolate out of the refrigerator they should come right off of the parchment paper then all you have to do is put them on your mouse. Yay! we are finished hope you enjoyed making them as much as me! :)
