Pumpkin Halloween Vegetable Soup

Hello everyone!!

Here's a great soup to do with your kids & friends for halloween!!

You Will Need:

..of course a medium pumpkin,

- Yellow beans

- Carrots

- Shallots

- Chives

- Asparagus

- Zucchini

- Mushrooms

- Tomatoes

- Ginger

- Chia seeds (white or black)

- Hemp seeds

- Brown flax seeds

- Nutritional yeast

- Textured soy protein (TVP)

The Pumpkin:

-Cut out pumpkin cap and remove the inside.

You can keep the seeds for another recipe :)

-enlarge the interior of the pumpkin and keep the pumpkin chunks in a bowl.

Add Tomatoes and Shalots:

-Chop tomatoes and shallots and add it to the pumpkin.

Chop Chop Chop!!

Chop asparagus, zuccini, ginger and yellow beans and add it to the pumpkin.

Finally Chop:

Finally chop the carrots, pepper, chives, mushrooms and spinach and add it to the pumpkin.

Pumpkin Chunks!

Then add the pumpkin chunks and mix well.

The Famous Seeds!

Now add the chia, flax and hemp seeds and add the textured soy protein (TVP) and the nutritional yeast.

Mix well.

The Cheeseee Part!

Add Daiya vegan cheese on top.

Cooking Prep!

Preheat the oven at 450°C, close the pumpkin and put it in a pan.

Cooking:

Cook at 450°C for 2 hours.

After 2 Hours Cooking Remove the Lid

...And Broil for 3-4 Min.
