Pumpkin Chocolate Chip Cookies
In this Instructable, I will show you how to make pumpkin chocolate chip cookies from scratch. If you like chocolate and you like pumpkin, this easy pumpkin cookie recipe is for you! They are super easy to make and will be a great addition to any Halloween party this year.

Supplies
Ingredients:
- 1 2/3 cups of all-purpose/plain flour (205g)
- 1/4 tsp. salt (1g)
- 1/2 tsp. baking soda (2g)
- 1 tsp. baking powder (5g)
- 1 tsp. ground cinnamon (3g)
- 1/4 tsp. ground nutmeg (1g) optional
- 1/4 tsp. ground cloves (1g) optional
- 1/3 cup softened butter (76g)
- 1/2 cup white granulated sugar (100g)
- 1/2 cup brown sugar (100g)
- 1 large egg
- 1 tsp. vanilla extract (5ml)
- 2/3 cup canned pumpkin (168g)
- 1 cup of chocolate chips (milk, dark, or semi-sweet) (170g)
Tools/Equipment:
- Bowls
- Whisk
- Hand mixer or stand mixer or wooden spoon
- Spatula
- Sheet pan or cookie sheet
- Wire rack
- Toothpicks
- Spoons
Whisk Dry Ingredients
Preheat the oven to 350F/176C.
In a medium bowl whisk together the flour, salt, baking soda, baking powder, cinnamon, nutmeg, and cloves. Or if you like, you can put those ingredients in a sifter and sift them into the bowl.
Mix Wet Ingredients
Now in a large bowl cream together the softened butter and the white sugar and brown sugar. Then add the egg, vanilla extract, and pumpkin and mix until just combined. Scrape the sides of the bowl with a spatula.
*Use store-bought canned pumpkin or make your own fresh with this homemade pumpkin puree recipe.
Finish That Cookie Dough
Add the flour mixture about a third of it at a time mixing it in with a hand mixer or a wooden spoon. Once all combined give the bowl a good scrap with the spatula. Add all but about a few tablespoons of the chocolate chips and stir until combined. And just like that the cookie dough is ready to go.
Bake Those Cookies
Using two Tablespoons or a mini ice cream scoop scoop out a heaping tablespoon of dough and place it on an ungreased cookie sheet. You should be able to get about 12 of them on a standard baking sheet. Make sure to place them about 2 inches apart because they will spread out a little bit.
Now add the remaining chocolate chips on top of each of the cookies. I usually put 3 to 5 chips on top.
Bake at 350F/176C for 15 to 18 minutes until a toothpick comes out clean. Remove them from the oven and allow them to cool on the baking sheet/sheet pan for about 5 minutes then transfer them to a wire rack to cool completely.
