Pumpkin Cheesecake Dessert

I made this pumpkin cheesecake for Thanksgiving, and everyone loved it. The maple syrup drizzle is the perfect topping. With its ginger crust, this rich and creamy spiced pumpkin dessert never fails to get rave reviews.The rich taste of pumpkin can be found in each easily cut bite. Try this festive dish for the holidays.

Pumpkin Cheesecake Dessert

Ingredients:

1 1/2 cups crushed gingersnaps (about 30 cookies)

1/4 cup, butter, melted

5 pkg. (8 oz. each) cream cheese, softened

1 cup white sugar

1 cup powdered sugar

1 can (15 oz.) pumpkin

1 tsp. ground cinnamon

1 1/4 tsp. pumpkin pie spice, divided

1 tsp. clear vanilla extract

2 tsp. vanilla paste

2 Tbsp. powdered sugar

1/4 cup pumpkin pie spice liqueur

Ground Nutmeg, whipped cream topping

Maple Syrup

2 cups Whipped Cream

Prep: 25 Minutes

Bake: 40 Minutes + Chilling

Make the Crust

In a small bowl, combine gingersnap crumbs and butter. Press onto bottom of a greased 13 x 9-in. Baking dish; set aside.

In a large bowl, beat cream cheese, powdered sugar and white sugar until smooth. Beat in the pumpkin, cinnamon, pie spice, vanilla and Pumpkin Pie Liqueur (optional).

Add eggs; beat on low speed just just until combined. Pour over crust; sprinkle with 1/4 teaspoon pie spice.

Bake the Dessert

Bake at 350 degrees Fahrenheit for 40 to 45 minutes or until the center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of baking dish to loosen; cool 1 hour longer. Refrigerate overnight.

Sweeten the Whip Cream

In a small bowl, add whipped cream, vanilla paste and powdered sugar. Whisk together until blended. Add whipped cream to pipping bag with small decorative tip.

Serve the Dessert

Cut into squares; serve with maple syrup drizzled over cheesecake, pipe a dollop of whipped cream, sprinkle ground ginger and serve. Refrigerate leftovers.
