Pumpkin Bread With Chocolate

Supplies
- 1/2 cup vegetable oil
- 1/4 cup milk of choice
- 2 eggs
- 1 ½ cups thick pumpkin puree, homemade or canned
- 1/4 tsp cinnamon
- 1/4 tsp ground coriander
- 1/2 tsp cardamom
- 1/4 tsp salt
- 1 cup whole wheat flour
- 1/2 cup oatmeal or oat flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tbsp sugar
- 3/7 cups chocolate chips + extra ¼ cup for topping
- 10 inch bread loaf pan
- parchment paper
- 2 bowls
- Oven
- wooden skewer
- spatulas, whisk and spoons
Wet Ingredients
Combine all wet ingredients - vegetable oil, milk, eggs, pumpkin puree.
Dry Ingredients
Combine all dry ingredients - cinnamon, ground coriander, cardamom, salt, whole wheat flour, oatmeal, baking powder, baking soda.
Make a well in the center.
Combine
Pour wet ingredients into he dry ingredients. Mix in sugar.
Stir in chocolate chips.
Bake
Preheat oven to 350 F.
Pour batter into the pan, layered with parchment paper.
Sprinkle leftover chocolate chips on top.
Bake for an hour until inserted wooden skewer comes out clean.
Let it cool on a rack and enjoy with a cup of tea or coffee.
