Pumpkin Apple Streudel Muffins

I'm not much of a pumpkin fan, or at least I didn't think I was until I tried these muffins!  My mom has been making them for years and I never even tried them because I didn't think I would like them...and then I finally made these recently, tried one, and ended up eating about 10 muffins all by myself because they are SOOOO good!

Pumpkin Apple Streudel Muffins

2 1/2 cups flour
2 cups sugar
1 Tbsp. pumpkin pie spice
1/2 tsp. salt
1 tsp. baking soda

Mix above ingredients and set aside.  In another bowl, mix together the following:

2 eggs, lightly beaten
1 cup pumpkin
1/2 cup vegetable oil

Once the wet ingredients are well mixed, add this mixture to the dry ingredients and mix everything together.    Next, stir in 2 cups of finely chopped and peeled apples.

Spoon into 24 paper lined muffin cups and then sprinkle with the streudel topping.  To make the topping, combine:

2 Tbsp. flour
1/4 cup sugar
1/2 tsp. cinnamon

Cut in 4 teaspoons of butter until mixture is crumbly.  (I cut the butter in with a knife and fork, and then used the back of the fork to smash everything together and mix it better.)

Bake muffins at 350 for 35-40 minutes.  These are wonderful warm, but they taste great a couple days later too!
