Pressure Cooker Corned Beef
If you have a pressure cooker this is a fast way to get a delicious corned beef meal without the 3+ hour wait.
Ingredients:
- 1 slab of corned beef, washed.
- 12 whole black peppercorn
- 3 springs of parsley
- 1 bay leaf
- 1 onion
- about 5 cups of water

Add the corned beef to your pressure cooker. You may have to cut it in half to make it fit.
Add the peppercorns, onion, parsley and bay leaf.
Cover everything with the water. Do not go over the "Fill it up to here" line in your pressure cooker.
Bring the water to a boil. Put the lid on you pan and bring it to pressure.
Cook for 40 minutes in low pressure.

Move the pressure cooker out of the burner.
Let the pressure come down naturally, about 10 minutes. This makes sure your meat doesn't dry out.
Discard the broth, take the meat out, slice and enjoy :)
