Preserving Carolina Reaper Peppers

There are many ways to preserve peppers, drying, pickling, freezing or making a salsa. But the best method to store them for a long time as a fruit is preserving them in alcohol. For the taste I used a plum brandy called Slivovitz, which has a high alcohol percentage for a long preservation.

Ingredients and Equipment:

Ingredients:

  • 50 grams Carolina Reaper peppers
  • 100 ml Slivovitz (plum brandy)

Equipment:

  • Kitchen Knife
  • Cutting board
  • Mason jar

Additional Equipment:

  • Disposable gloves
  • Safety goggles

This is no joke, always use safety goggles and gloves while dealing with the peppers. When preparing the mason jar for storage, dip the peppers into the hot water and pat them dry. Cut them open, remove the stalk and the seeds. Slice into small pieces and place them into the mason jar. Pour some Slivovitz on top and make sure no small air bubbles are stuck. Step by step fill the mason jar with pepper slices and Slivovitz.

When you are done, make sure all slices are covered by the high percentage brandy. This way you can store the Carolina Reaper peppers for a very long time. They might lose their colour if you don't store them in a cool, dark place.
