Prawn's Biryani - Indian Style
Prawn biryani is very easy and less time consuming one pot meal. Total cook time is 45 minutes.
I love many kind of fishes and in my area we get plenty of them at very reasonable rates, but prawns are my all time favorite as they are easy to clean and cook.
Sometimes finding fresh prawns is big task, but i know simple trick - when prawns are fresh then their heads are strongly bonded with body but if heads are loose then prawns are not fresh.
Material Required
Prawns - 12 nos (or as many you want, just add extra masala in proportion)
Rice - 3 cups
Chopped onions - 2 nos
Chopped chilli - 1/2 tsp
Chopped garlic - 1 tsp
Chopped ginger - 1/2 tsp
Chopped carrot
Coriander - for garnish
Dry Masala
Bay leaves - 3 leasves
Clove - 15 nos
Black pepper - 10 nos
Fennel seeds - 1/2 tsp
Dry masala (Optional)
Star anise - 2 nos
Cinnamon nutmeg -2sticks
Cook Rice and Clean Prawns
I don't have proper pics of both activities as my both hands were busy and no other photographer present near.
but things are pretty simple take proper pot which will accommodate rice.
cooking rice is very easy to learn but cooking to perfection is quite difficult. My simple technique is 2 cup rice + 3 cup water and bole for 20 minutes on slow flame after that remove excess water with mesh.
While rice is cooking we can clean prawns, just cut prawns heads front part and tail throne. then remove its digestive system.
You can remove prawns digestive by two ways, just google it you will find plenty of guides.
Pre-Preparation
When rice cooked to 90% then remove pot from gas and then remove all rice in plate.
then put this empty pot on stove and drop some oil in it.
when oil heat up then add chopped onions.
wait until onions turn slightly yellow-red.
then remove onions and put over rice (which is already in plate)
sprinkle coriander over it. (not needed but i did)
Prawns Cooking
Add 2 tsp oil
add garlic
add cinnamon
add chili
add bay leaves
add fennel seeds
add carrots
add some dry masala (or chili powder also ok, or some food colour)
let cook then for 2 min
then add prawns and stir it well so all masala will cover prawns.
if required then add some water to it and let it cook for 10-15 min.
when prawns will cook then their color will turn to slightly yellow red.
when they cooked then slow the stove flame.
Final Mixing
When prawns cook then add some coriander.
and now add our rice to it.
mix it completely till every grain of rice look yellow.
after that just put same dish over it and cook it for next 5 min on very slow flame.
Garnishing-Serving-testing
Garnish it with coriander-tomato and serve it with lemon.
now testing.
i don't have proper word for it but it always taste delicious, yesterday i make it and eat it but my mouth is just started watering while writing this.
