Potato Soup for One
I love any kind of soup. But when you are eating by yourself most recipes make so much you have to eat soup all week. Here is an easy recipe for making one bowl of potato soup.
Ingredients
1 large potato or a couple of small ones. ( about 2 cups of potatoes)
1 cup of milk
2 Tablespoons bacon bits (or 2 slices cooked and crumbled)
1/3 cup cheese (american or cheddar)
1/3 cup onion chopped
1 tablespoon butter
1/2 tsp salt to boiling water
1/4 tsp salt and 1/4 pepper to the soup. (optional based on your taste)
Cooking
Cut up the potato in small pieces and cook in boiling water, make sure you add salt to the water. While that is cooking chop your onion. I only had a large onion so I am going to save some of my onion for later. When the potatoes are soft but not mushy drain the water off the potatoes. Keep the potatoes in the strainer and return the pot to the stove.
Cooking
Melt the butter and add 1/3 cup chopped onions. When the onions are cooked add the bacon bits. Now add the potatoes back to the pot and mash the potato mixture. I use a potato masher or you can just use a fork. You still want it lumpy but the potatoes will help thicken the soup. Pour the milk and mix well. Add salt and pepper and heat until it is a slow boil. Remove from the stove and add the cheese and stir until melted. If you add the cheese too early it will go to the bottom and burn.
Let's Eat
I like to add a little extra cheese to my soup and it is ready to eat. Nothing like soup on a cold night.
Variation: You can add 1/2 cup of corn or 1/2 cup of cooked chicken to your soup. Enjoy
