Potato Roses With Zoodles

Greetings Everybody,

Now we are all in month that brings whole of joy, happiness and celebration... Its indeed gifting season and enjoying holidays with our loved ones, special happiness comes from home cooked meals. If those home cooked meals are not yummy but also if its an feast for eyes then its an added bonus as appetizier. So this instructables is also about an interesting appetizier made from all time fav veggie that everybody loves... Potatoooo.... with unique salad. Let's begin shall we ?

Ingredients

For Potato Roses

1) Medium sized potato - 4 nos (total 250 g)

2) Melted butter - 1/4 cup

3) Red chilli flakes - 2 tsp (to make it slightly spicy)

4) Asafoetida or garlic powder - 1/2 tsp

5) Oregano - 2 tsp

6) Salt - As required

7) Garlic - 1 clove

8) Coriander leaves - for garnishing

9) Sweet potato (not shown) - 100 g

10) Pepper powder - 1 tsp

Supply

Mini muffin tin

Initially i thought of doing without peeling the skin to give frilled edge but second guessed that it might look like burnt edges even though it isn't, so peeled the skin anyway.

Slice it using slicer, you can even use knife to cut if you are really good cutter with precision. well im not :P so using slicer ensures the slices are even

Slice

Slice thickness shall be 1-2 mm not more than that. As its gets thicker, potato slice will start getting breaking when rolled up. Also this minimal thickness gives out petals effect well

Starch Where Are You

Once all potato slice, soak in bowl of water to remove starch.. Actually during potato chips also this process is done to remove excess starch, gives potato a twisty shape.. after 10 mins of soak remove the slices and remove excess water by using absorbing cloth to pat dry

Add the butter in hot kadai/ pan and melt it fully, if you looking for vegan option you can replace melted butter with olive oil, it will be good substitute for melted butter.

Add the spices, asafoetida or garlic powder, oregano, pepper powder, salt , mix well

Finally add chopped garlic and coriander leaves, give it a twirl and pour in potato bowl.

Rose Base Part 1

You can use mashed potato even for NV lovers, you can wrap a bacon around the rose to hold it. I have used sweet potato as the rose will be crispy and spicy finishing of base shall be slightly sweet. No extra sweetners are added, just boil the sweet potato, peel off the skin and mash it... Its even good to eat in even this way.

Mash the sweet potato and check whether its holding shape

Rose Base Part 2

Now roll the sweet potato into 2 cm ball, put it in mini muffin tray and press it. Before doing this grease the tin with oil or use cooking spray for non sticking.

Potato Petals

Take a silicone mat or parchment paper, grease the surface using oil.

Place potato slice one by one in the middle of previous slice, in that way when you roll all with be interconnected to some extend. For one rose i used 10 slices and rolled gently, be very careful while as one piece tumbles consecutive arrangement also will be disturbed.

Try to arrange the slice of same potato so that sizes aren't odd.

Full Rose

These are full petals roses, but in the middle of doing this i felt this is quite big in height for the muffin tray, even though it was fitting width wise as sweet potato base is holding but height is slightly tall making it look little odd. It may be due of natural potato shape (oval slice)

Half Petal Rose

For third rose, decided to reduce the height of rose but making it as half petal ones. same like before arrange 10 slices of potato and cut in the middle using pizza cutter (using knife will be challenging to achieve same result as pizza cutter). Now folding the half petal rose turned into this cute piece. This actually looked more similar to rose, now follow the same for remaining ones.

I could have posted from output of third rose, but needed show the difference between half slice and full slice, also the base was flat for half sliced ones making the job easier :)

Bake

Preheat the microwave oven to 200 C for 15 minutes, bakes the roses at same temperature for 25 mins, until the edges turns crispy.

Zoodle Ingredients

1) Cucumber - 1 no

2) Zucchini - 1 no (not shown here)

3) Olive oil / Ground nut oil -2 tsp

4) Kosher salt or pink salt - As required

5) Pepper powder - 1 tsp

6) ACV- 1 tsp

7) Sesame seeds - 1/2 tsp

While your roses are baking, mean while will prepare zoodles

Spiralizer

Recently bought this spiralizer, realised that i could make noodles out of vegetables, sounds interesting right. Perfect for picky eaters, the noodles outlook is appetizing that they will be tempted to try it. Cucumber has more water content, but zucchini gave perfect out come compared to cucumber.

Add the ACV, salt, pepper, sesame and oil.

2 Minute Noodles Ready

Finally add grated carrots and top with coriander leaves. It look so smooth when taken using fork, doing this first time was i aww reaction.

It came out really well. edges crispy & middle soft , flavours are blended well after baking
