Potato & Oatmeal Pizza Crust (No Flour)

That's right! A healthy alternative to traditional flour based pizza dough. This Instructable will show you how to make a delicious flourless pizza crust using potatoes, instant oatmeal and your choice of spices.

Supplies

Tools:

-Oven

-Food processor or blender

-Measuring spoons

-Measuring cups

-Spatula

-Big bowl for mixing

-Big pot for boiling

-Small sauce pan

-Baking tray

-Parchment paper

-Pizza cutter

-Pizza server

Ingredients

For the Dough

-1000 grams or 2.2 pounds of potatoes. (keep the skin on but clean em')

-2 cups instant oatmeal

-1tsp baking powder

-1tsp garlic powder

-1tsp mixed herds or Italian herbs (seasoning)

For the anchovy sauce

-1 can chopped tomatoes (not tomato sauce)

-1 15gram can healthy low sodium anchovies

-Olive Oil

Toppings

-1/2 red onion

-2 green peppers

-Cooked chicken breast

-Cooked lean bacon

The Crust!

This recipe is for two pizzas or one really big pizza. (I have a big pizza tray)

You'll need:

-2 cups of instant oatmeal

-1000 grams or 2.2 pounds of potatoes

-1tsp baking powder

-1tsp garlic powder

-1tsp mixed herd or Italian herbs (seasoning)

I'll show you how to make oatmeal flour in the next step.

You don't need to peel the potatoes, but make sure they're clean before you boil them. Just scrub them off under the faucet.

The baking powder might look weird on the list, but it will increase the volume and lighten the texture. You'll notice it in action during the first bake too. It works by releasing carbon dioxide gas into the dough through an acid-base reaction, causing bubbles in the mix to expand and thus leavening the mixture.

Any herbs or spices will work in this dough too. Use a tsp of anything, just remember ONE TSP max. Try:

-Oregano

-Thyme

-Basil

-Crushed red pepper

-Parsly

-Fresh pepper

Warning, mixing all of these together will open a portal in your kitchen that leads to Guy Fieri's living room where he'll be waiting to welcome you to Flavor Town. Once open, it can not be closed and you'll have Guy Fieri walking around your house wrapping everything in bacon. I warned you!

The Oatmeal Flour!

I love oatmeal! I know, I know...it taste like eating freshly shredded cardboard. Trick your kids into to eating it by feeding them this pizza.

For the oatmeal flour, just put two cups of instant (unflavored) oatmeal into a food processor and turn it into powder. You can probably use a blender or mixer as well.

Instant oatmeal is partially cooked and dried for fast preparation and I like instant oatmeal in this recipe, because it will absorb the water out of the potatoes giving you an awesome crust.

Remember this recipe is for two pizzas!

Clean the spuds off, cut them up and boil until tender. Tender is when you can easily push a fork into one. It takes about 20 minutes on my gas stovetop over here in Japan.

Once boiled, dump them in a strainer and let cool off for 15 minutes or until they're not too hot to handle. You want to shake the water off so they're not wet and you don't want to put hot potatoes in a blender/mixer/food processor.

I use a big Ninja Dough Mixer. You might need to blend them in batches depending on the size of your machine

The potatoes stick to the top part of my mixing bowl, so I need to push it all down with a spatula.

It should end up looking like whipped potatoes. You can hand mash them too, it doesn't really matter. You might also have some chunks in the mix that didn't get blended. The chunks are OK and you can just leave them.

Let's make the dough!

Mix everything together in a big ol' bowl. The potatoes, oatmeal flour, herbs and baking powder.

I start mixing with a spatula and them use my hands. The dough isn't that sticky. It's like paper clay and very easy to work with. Mix it up for about 5 minutes with your hands.

You'll bake the dough twice!

The first time is to get it golden brown and firm so you can top it.

-Use parchment paper (never foil).

-Just push the dough out on the parchment paper until it is nice and evenly smooth.

I like a heavy pizza, so I go about 3/4in or 2cm high with the dough.


Bake at 230C / 450F for 25-20minutes

The thinner the dough the shorter the first bake time.

The dough will look like it is rising in spots, but it's not. That's the baking powder working.

The first bake is finished when the dough is golden brown and you can lift up a corner.

When the first bake is finished, pull the pizza out of the oven and add all of the toppings.

Do not remove the pizza from the pan yet.

Put on the toppings and then put the pizza back in the oven for the second bake.

Any topping will taste awesome on this crust!

I used mozzarella cheese, chicken, red onion and green peppers.

The bacon is for my lovely wife and teenage daughter. They're like "Chicken? Nah bro!"

If you're trying to keep this healthy, avoid red meats and use mozzarella cheese. Don't tell your lovely wife that bacon is not healthy, because she doesn't want to hear it. If you want red meat go with something low sodium and lean. Mozzarella is the best cheese decision compared to regular full fat cheeses, because mozzarella is not only low in calories but also contains protein.

Anchovy Sauce...Really?

My high school aged daughter is all about anchovy sauce! Did you just gag?

Anchovy sauce is good!

Anchovies are really healthy, but be careful buying the canned ones. Read the label and choose your anchovies wisely.

You can eliminate some of the excess salt by rinsing the fillets or soaking them in cold water for 30 minutes.

To make anchovy sauce simply heat up olive oil. Drop in 6 anchovies and cook until they break up into flakes. At this time, dump in a can of chopped tomatoes and simmer for 30 minutes.

If you hate anchovies, I have you covered!

Pizza sauce is easy to make.

-1 can chopped tomatoes

-1/2 tsp salt

-1/2 tsp garlic powder

-1/2 tsp oregano

-1/2 tsp basil.

Simmer for 30 minutes.

You can add anything to this sauce, just only use 1/2 tsp.

If your not watching what you eat add 1/2 tsp sugar and a couple drops of lemon juice.

Put the topping on and bake for another 20-25 minutes!

Let cool for a couple minutes before cutting.
